Lightly spray a 10” cast iron skillet and preheat oven to 375F.
Core and slice peaches into thin wedges, and set aside in a medium bowl.
In a small bowl, whisk together ½ cup sugar, cornstarch, cinnamon.
Pour sugar mixture over the peaches and mix well (I like to do this in 2 steps for a more even mix).
Meanwhile, in another medium bowl, whisk all-purpose flour, remaining ¼ cup sugar (reserving the 1-2 teaspoons for topping), and sea salt.
Add in chunks of cold butter and work it into the flour mixture by hand (note: if you have a dough blender/cutter you can use this, or two forks).
Add the egg into the dough and mix until well combined.
Pour peach mixture evenly into prepared skillet.
Sprinkle crumbles of dough on top of the peaches and cover even with remaining sugar.
Bake for 45 minutes or until golden brown on top and allow it to cool and thicken (about 15-20 minutes).
Enjoy warm with vanilla ice cream of on its own!
