This dessert was a favorite of Ken’s while he was growing up. His grandmother used to make a recipe similar to this Grandma’s Cookie Cake as a special treat whenever she saw him! My husband loves all cream filled cookies and this is probably why. They remind him of her! I never got to meet her but I wish I did! She sounds even more amazing than this cake! Just kidding! Of course she was more amazing than this cake!
This recipe for Grandma’s Cookie Cake is so versatile! You can use whichever flavor of cake mix you desire as well as any cream filled cookie and this cake will be a hit, every time! Both kids and adults love it! We use a homemade buttercream icing but I have used store bought in a pinch! Saves a bit of time when I need to!
- 1 box white cake mix 2 layer size
- 1/2 cup cooking oil
- 4 large eggs
- 1 cup water
- 1 1/2 cups cream filled cookies coarsely chopped
- 1 cup cream filled cookies coarsely chopped for top
- 1 cup butter unsalted, room temperature
- 1/2 cup milk
- 1/2 teaspoon salt
- 2 teaspoons vanilla
- 5 cups powdered or confectioner’s sugar
In a large bowl combine cake mix, oil, eggs and water. Beat on low and then medium for a few minutes until incorporated. Gently fold in 1 1/2 cups crushed cookies. Prepare bundt pan with butter and then flour. Pour cake batter into bundt pan. Bake at 350 degrees for 45-55 minutes or a toothpick inserted into the center comes out clean. Cool and place rack on top of bundt pan. Flip and allow to totally cool. Flip back onto serving plate.
In a large mixing bowl combine all of the ingredients. Blend together on low speed until smooth.
Smear icing all over the cake. Sprinkle with 1 cup of crushed cookies. Serve and enjoy.
