    This sheet pan breakfast bake recipe is fully loaded with all your favorite breakfast flavors. Sausage, eggs, potatoes, bell peppers, bacon, and cheese come together to create a delicious and hearty breakfast everyone will love.

    Breakfast on a sheet pan is a fantastic way to prepare a delicious and nutritious meal with minimal cleanup. By using a single pan to cook all your morning favorites, you can save time and effort while enjoying a hearty breakfast that'll fuel your day and everyone will love.

    This was inspired by my baked egg cups and sourdough breakfast sandwich and pairs well with any of the options in this amazing collection of good sides for pancakes.

    Ingredients

    You'll only need a few simple ingredients that you can find in your kitchen or at your local grocery store in just a few minutes.

    • Frozen Diced Hash Browns: The perfect zero-prep way to add potatoes to your breakfast sheet pan. You can also use shredded hash browns instead.
    • Vegetables: Chop up a bit of sweet onion, red bell pepper, and green peppers for your breakfast sheet pan. You can also use other colors of peppers if you prefer.
    • Seasoning: Use garlic powder, Italian seasoning, and rosemary to enhance the flavors of your dish.
    • Olive Oil: I prefer olive oil but you can also use vegetable oil or canola oil instead. It's necessary to keep everything from sticking but also aids in cooking the potatoesand veggies.
    • Eggs: You can use large eggs, egg whites, or yolks depending on your preferences. Crack them onto the tray among the other items or scramble them before pouring onto the pan.
    • Breakfast Meat: We're going to use a combination of smoked sausage and crumbled cooked bacon though you can also use crumbled sausage or diced ham, in any combination you prefer.
    • Monterey and Colby Jack Cheese: My favorites for this dish but you can also use other cheeses such as pepper Jack or cheddar.
    • Green Onions: A tasty garnish but you can also use chives or parsley as the garnish instead.

    Substitutions and Variations

    Sometimes, you might not have all the ingredients required for this easy breakfast recipe or you may want to try some new flavor combinations. Don't worry, there are plenty of substitutions and variations you can try.

    • Spicy: Add a sprinkling of chili pepper flakes, chili powder, smoked paprika, diced jalapeno peppers, smoked jalapeno powder, or chipotle powder to the sheet pan ingredients for a bit of heat.
    • Bake in Muffin Tin: Bake them in a muffin tin instead of a sheet pan. Divide the egg mixture and toppings evenly among the greased muffin cups and bake at the same temperature until cooked through. This is perfect for a more portable breakfast bake option.
    • Add More Veggies: Feel free to add some sliced mushrooms, tomatoes, or broccoli florets can be mixed in for added texture and nutrients.

    How to Make Breakfast Sheet Pan

    This is a sheet pan recipe so it should come as no surprise that it's super easy to make. It only takes a few minutes and a few simple steps. That's it!

    1. Place the hash browns, onion, and bell peppers on a baking sheet. Add salt, pepper, Italian seasoning, rosemary, and garlic powder and drizzle with olive oil.
    2. Toss to coat and bake uncovered for 25 minutes.

    1. Remove the pan from the oven and make 6 small wells in the hash browns.
    2. Crack an egg into each hole. Be careful not to break the yolk!.

    1. Scatter the sausage, bacon, and cheese evenly over the pan. Avoid adding any on the eggs.
    2. Bake until the eggs are done. It should take about five minutes for runny yolks and closer to ten minutes for a solid yolk.

    1. Remove the pan from the oven and top with sliced green onions. Enjoy!

    Storage

    Leftovers: Once the dish has cooled to room temperature, transfer any leftovers to an airtight container. I suggest separating any layers with a sheet of parchment paper. You can store leftovers in the fridge for up to 3 days or the freezer for up to two months.

    Reheat: If frozen, defrost it in the fridge before reheating. Microwave at 30 second intervals until heated through. You can also reheat a portion in a baking dish covered with foil in the oven at 350 degrees F for 10 minutes, remove foil and bake for another 3 or 4 minutes.

    • Toasty Bread Options: Whole-grain bread, English muffins, cream cheese biscuits or even air fryer frozen biscuits add a delicious contrast to the soft, fluffy eggs. You can even serve them as breakfast sandwiches using the sheet pan eggs as a filling.

    • Cook in batches. We start first with the ingredients that take longer to cook, like potatoes. Then next we add the faster cooking items like eggs and vegetables later. This ensures that everything is cooked to perfection.
    • Prep ahead. Chop vegetables and cook meats the night before. Store them in the refrigerator and simply arrange them on your sheet pan when you're ready to cook.

    Ingredients
      

    • 1 bag frozen, diced hash browns thawed and drained or Feel free to use

      shredded hashbrowns instead.

    • 1 small sweet onion diced or yellow or white will work too.
    • ½ red bell pepper diced, Any color of bell pepper will work here.
    • ½ green bell pepper diced, Feel free to use any color.
    • teaspoon salt
    • 1 teaspoon pepper
    • ½ tablespoon garlic powder 2 teaspoons of fresh minced garlic would also do the trick.
    • 2 teaspoons Italian seasoning
    • 1 teaspoon rosemary
    • 2 tablespoons olive oil You could also use vegetable oil or canola oil here.
    • 6 large eggs
    • ½ pound smoked sausage sliced into coin sized rounds, You could use crumbled cooked breakfast sausage instead if you’d like.
    • 8 slices cooked bacon crumbled
    • 1 ½ cups Monterey and Colby Jack cheese shredded, You could also use pepper Jack or cheddar. Feel free to pick your favorite shredded cheese.
    • 2 tablespoons green onions thinly sliced

    Instructions
     

    • Spray a rimmed baking sheet with cooking spray and preheat your oven to 400°F. Make sure to adjust your oven rack to the middle position for optimal heat distribution.
    • Scatter the hashbrowns, onion, bell peppers, salt, pepper, Italian seasoning, rosemary, and garlic powder over the prepared sheet pan and drizzle with olive oil. Toss to coat everything thoroughly with the olive oil and combine the ingredients.
    • Spread the mixture evenly over the entire pan. Bake uncovered for 25 minutes and then remove them from the oven (leave the oven on). Make 6 egg size wells in the hashbrowns about 2 inches apart and crack an egg in each (be careful not to break the yolk!).
    • Scatter the sausage, bacon, and cheese evenly over the pan making sure you don’t place any over the eggs, just scatter them around the eggs. Bake for 5-10 minutes or until the eggs are done. . 5 minutes for runny yolks and closer to 10 minutes for a solid yolk.
    • Garnish. Remove the pan from the oven and top with sliced green onions.
