This school breakfast pizza is everything you ever loved about the classic cafeteria breakfast pizza - only better! Eggs, sausage, cheese, and onions are cooked to perfection on a pre-made pizza crust, so it's delicious and easy.
I've always loved cafeteria food. I know some people despise it, but for me, school pizza's just so good. I remember school lunches with such nostalgia. I loved all of them, but one of my favorite school items was the breakfast pizza.
This was inspired by my other pizza recipe and our Homemade Pizza Rolls in an Air Fryer recipe that puts a spin on classic pizza and pairs well with this amazing buttermilk ranch recipe.

Ingredients
You'll only need a few simple ingredients to make this recipe, and you'll find them all easily at your local grocery store.
- Refrigerated Pizza Crust - A fresh pizza crust will also work. Simply follow package directions to and pre-bake it as directed. You can also use pita bread too.
- Bacon and Breakfast Sausage - Cooked diced ham or chicken would be tasty as well.
- Eggs - Egg whites or an egg replacement or substitute will definitely work.
- Whole Milk - Feel free to use half and half for a richer scramble.
- Cheddar Cheese and Pepper Jack Cheese - Feel free to use a different kind of cheese. American, Colby jack, Monterey jack and provolone, mozzarella are great choices.
- Salt and Pepper - Total flavor enhancers.
- Onion Powder - You could use a tablespoon of diced, sauteed onion instead.
- Minced Garlic - I used fresh minced garlic but a teaspoon of garlic powder would work here as well.
- Green Onion - The green onions are optional but I love the pop of color and taste they give the finished product.

Substitutions and Variations
- Add Heat: Add a bit of chili pepper flakes, diced jalapeno pepper, homemade hot pepper sauce, our jalapeno powder, smoked jalapeno powder, or chipotle powder to the egg mixture for a bit of heat.
- Add Vegetables: Try adding sauteed mushrooms, onions, and/or bell peppers on this pizza as well.
- Add Beans: Add black beans, kidney beans or chick peas, if desired.
Instructions
1: Bake the pizza crust on a baking sheet.
2: Scramble the eggs, cheese, and spices.
3: Cook the eggs. Add the toppings to the pizza crust and bake again until melty.
4: Top with green onions, slice and serve.
Hint: Use a fork to poke holes all over the pizza crust before baking it to prevent bubbling.

Storage
Refrigerator: Once the pizza has cooled completely, seal it in an airtight container (you might have to slice it first) and store it in the fridge. It will keep for up to 3 days but it will get a little soggier as time goes on, so it’s best to enjoy it sooner rather than later.
Freezer: Allow the pizza to cool to room temperature before wrapping each slice individually in plastic wrap and sealing it inside a freezer safe airtight container inside freezer for up to 3 months. Allow it to thaw in the fridge before reheating.
Reheat: Preheat the oven to 350°F and line a baking sheet with aluminum foil. Arrange the leftover pizza in a single layer on the baking sheet and bake for about 10 minutes or until warmed and melted. You can also microwave a slice of breakfast pizza in 15 second intervals until heated through.

- 1 tube Refrigerated pizza crust
- 1 pound cooked bacon chopped
- 1 pound cooked breakfast sausage crumbled
- 8 large eggs
- 1 cup whole milk
- ¾ cup cheddar cheese shredded, divided
- ¾ cup pepper Jack cheese shredded, divided
- 1 teaspoon salt
- ½ teaspoon pepper
- 1 teaspoon onion powder
- 2 teaspoons garlic minced
- 2 tablespoons green onion thinly sliced
Instructions
- Preheat the oven to 400°F and spray a baking sheet with non stick cooking spray
- Pre-bake the crust. Stretch the crust out over the baking sheet making sure to reach all sides and corners. Use a fork to prick a few tiny holes in the dough so that it doesn’t puff during the baking process.
- Bake for 8 minutes and then set aside but do not turn off your oven. If the pizza dough package has different instructions, follow those instructions instead.
- Whisk together the eggs, milk, ½ cup cheddar cheese, ½ cup pepper Jack, salt, pepper, onion powder, and garlic. Scramble. Pour the egg mixture into a non stick skillet over medium heat. Allow the eggs to sit for 30 seconds or so before pulling the edges toward the center with a rubber spatula and tilting the pan to allow the uncooked egg to make contact with the hot surface. Repeat until the eggs are cooked through.
Assembly
- Spread the scrambled eggs over the baked crust along with the crumbled sausage. Mix it together as you spread it across the pizza crust. Add the bacon over the entire pizza and sprinkle the remaining cheese over the top. Bake.
- Bake again until the cheese is melted (about 2 minutes).
For Serving
- Sprinkle the green onions over the top of the pizza, slice, and serve.
