This Breakfast Bombs recipe is a fun and creative twist on classic biscuits and sausage gravy. Flaky biscuit dough is filled with rich, homemade white gravy packed with savory breakfast sausage to create biscuit and gravy cups that are then baked to perfection. It’s one of our favorite biscuit breakfast ideas!

Why You’ll Love This Breakfast Bombs Recipe

    • They make great appetizers, breakfast, or dinner. Serve these as a brunch appetizer, a quick breakfast, or even an easy dinner! They’re great anytime!
    • It takes about 30 minutes. These biscuits and gravy bombs take only about 30 minutes to prepare and bake, making them perfect for busy mornings.
    • It’s an easy recipe to make. Minimal effort is needed to put these together. I use store-bought biscuits and a simple homemade gravy to take them to the next level.

    Ingredients

Below are the items you’ll need to make successful sausage gravy biscuit bombs. They include refrigerated biscuit dough and a few simple, easy-to-find ingredients for making a basic sausage gravy..

Ingredients for breakfast bombs arranged on a marble surface.
    • Biscuit dough: Any refrigerated biscuit dough would be great for this recipe. I love any buttery variety best because it tastes great with the sausage and gravy.
    • Ground breakfast sausage: I use original breakfast sausage, but feel free to try another variety like spicy or maple to slightly alter the flavor.
    • Flour: I use all-purpose flour to thicken the gravy to the right consistency. Ensure that there is plenty of fat in the pan to cook the flour and prevent lumps in the gravy.
    • Milk: Whole or 2% milk is the best choice for these sausage gravy bombs. The milk ensures a thick and creamy gravy!
    • Salt and Pepper: I season the gravy simply with salt and pepper. Ground sausage and cheese add great flavor, and I don’t want it to be overly salty.
    • Cheese: Adding shredded sharp cheddar gives the sausage gravy a more complex flavor and texture. Plus, cheese makes everything even better!

See the recipe card below for exact ingredient amounts, nutritional information, and detailed instructions.

    Variations

    • Sweet and spicy: Use a sweet variety of ground sausage and swap the shredded for pepper jack. It creates a delightful twist with a hint of spice.
    • Turkey sausage: Instead of pork sausage, try a leaner version using turkey sausage.
    • Meatless: Use your favorite meat alternative in place of the ground sausage to create a version without meat.

How to Make Breakfast Bombs with Biscuits

It’s easy to make biscuits with gravy inside! This breakfast bomb recipe is very straightforward. Preheat your oven to 350°F and grease the muffin tin so the biscuits are easier to remove.

Step 1: Cook the sausage and flour. Heat a saucepan over medium-high heat and add the ground sausage. Brown the sausage until it’s no longer pink. Then, add the flour. Whisk the flour with the sausage and allow it to cook until there are no dry clumps of flour.

Step 2: Add milk and spices. Pour in the milk and add the salt and pepper. Whisk the mixture until the ingredients are well combined.

Step 3: Thicken and add cheese. Continue to stir the gravy for about 5 minutes while it thickens. Then, whisk in the shredded cheese until it has fully melted.

Step 4: Prepare and fill the biscuits. Slice the biscuits in half and place one disc into each cavity of the muffin tin. Slightly stretch them out to create a small cup in the bottom. Fill each one with sausage gravy.

Step 5: Bake. Place the pan in the oven and bake it for about 13 minutes or until the biscuits are cooked through and the gravy on top is no longer jiggly.

Step 6: Serve. Allow them to cool slightly before removing them from the muffin tin. Enjoy!

⭐ Hint: Since a standard muffin tin only holds 12 sausage bombs, you can use two of them or bake in batches.

    Storage Directions

    • Storing: Leftover breakfast bombs can be stored in an airtight container in the refrigerator for up to 3 days. They can also be placed in a freezer-safe container and frozen for up to 2 months.
    • Reheating: You can reheat individual sausage bites in the microwave for 1-2 minutes or until warm. If desired, place them on a lined sheet pan and reheat them in a 350°F oven for 7-10 minutes.
    • Make Ahead: Prepare the sausage gravy ahead and store it in the refrigerator for up to 24 hours before assembling and baking these breakfast bombs.

    Serving Suggestions

    Recipe Tips

    • Try liners: You can use muffin liners to make the gravy bombs easier to remove from the pan. They also help with cleanup!
    • Adjust seasoning to taste: If you like your gravy a little less salty, feel free to taste and adjust to your preference.
    • Ensure the gravy sets: Check that the gravy has set before removing the pan from the oven to prevent it from spilling out of the biscuits.

    Recipe FAQs

Why did the gravy leak out of the biscuits?

The biscuit likely ripped when you put it into the muffin tin. Carefully stretch the dough to prevent rips.

Can I make homemade biscuit dough?

Sure! If you have a homemade biscuit recipe that you believe will work for this, go for it! I just love how easy the refrigerated dough is to work with.

Can I use butter instead of sausage grease?

Of course. Drain the excess grease from the sausage and melt 1-2 tablespoons of butter to cook the flour and thicken the gravy.
