Like a classic breakfast sandwich, these have eggs, cheese, and sausage. However, I also add diced green chiles for acidity and balance. I use a slightly spicy variety, but mild is also delicious. They also have a delightfully fluffy texture.

Ingredients
Below is everything you’ll need to make these sausage, egg, and cheese bites. They consist of common breakfast items that you likely have on hand already!

- Ground breakfast sausage: You can use any variety of ground breakfast sausage that you like. I enjoy Jimmy Dean’s hot sausage, but the mild and maple are also great options.
- Eggs: This is the most important ingredient to make these Jimmy Dean egg bites. I use large eggs for this recipe, so I recommend that you adjust the recipe if you use a different size.
- Butter: I add butter for its rich flavor. It also keeps the egg sausage cheese muffins soft and moist. I use salted butter because I don’t add any additional seasoning.
- Flour and baking powder: I add flour and baking powder to make them perfectly fluffy. The baking powder helps them to rise a little bit, too.
- Diced green chiles: There is not much liquid in the chiles, so there is no need to drain them. However, if you don’t like them, feel free to leave them out.
- Cheddar cheese: Shredded cheddar's sharp flavor pairs well with the egg and sausage. If you prefer, you can use another variety, such as Colby Jack or Pepper Jack.
See the recipe card below for exact ingredient amounts, nutritional information, and detailed instructions.
Variations
- Veggie: For an extra healthy and hearty version, add diced bell peppers, onions, mushrooms, or whatever vegetables you enjoy.
- Bacon: Swap the breakfast sausage for chopped bacon for a different version of this sausage, egg, and cheese bites recipe.
- Loaded: To pack them with even more flavor, make these with bacon, sausage, ham, and simple veggies like spinach and green onion.
How to Make Egg Bites with Sausage
Here are the instructions on how to make this sausage egg bites recipe. Preheat your oven to 400°F and line a large baking sheet with parchment paper or a silicone mat to keep the egg bites from sticking.

Step 1: Cook the sausage. Cook the sausage in a skillet over medium heat, breaking it up with the spatula as it cooks. Cook until it’s no longer pink. Then, let it cool for about 10 minutes before you move on to the next step.

Step 2: Combine with the eggs and butter. Transfer the cooked breakfast sausage to a large mixing bowl. Add the eggs and melted butter and beat the eggs with a whisk fully mixed with the other ingredients.

Step 3: Add the dry ingredients. Pour in the flour and baking powder and stir until it’s well combined. Ensure there aren’t any pockets of flour!

Step 4: Stir in cheese and chiles. Fold in the cheese and green chiles until they are well mixed into the sausage and egg mixture.

Step 5: Scoop and bake. Use a large spoon to scoop the mixture into 12 balls and place them onto a baking sheet. I recommend a second pan or baking them in batches. Cook them in the oven for about 10 minutes or until they are set and the edges are golden brown.

Step 6: Serve. Let them cool slightly and enjoy!
Recipe Tips
- Use a muffin tin: Instead of a baking sheet, try scooping the mixture into a muffin tin. This will give you uniform sausage, egg, and cheese bites and help brown them a bit more.
- Don’t overbake them. When they are ready, they will be soft and just set in the middle. If you bake them too long, they will become tough and dry.
- Drain the grease: Ensure you drain any grease produced by the ground sausage after you brown it.

Storage Directions
- Storing: Store these sausage egg bites in an airtight container or resealable bag for up to 4 days in the refrigerator. Or, freeze them for 3-4 months!
- Reheating: You can reheat them in the microwave for convenience. Arrange a couple on a microwave-safe plate and heat them for 1-2 minutes or until warm.
- Make Ahead: These are easy to make ahead! They have a great shelf life, making them perfect for meal prep. Bake them ahead or cook the sausage and store it in the refrigerator to make the process faster.
Serving Suggestions
- For a fun serving idea, try topping your egg, sausage, and cheese muffins with a small dollop of jalapeno bacon jam or a drizzle of butter pecan syrup.
- Add some air fryer candied bacon to your sausage egg bites for a sweet and savory flavor.
- Serve them with a sweet breakfast item like a slice of chocolate chunk banana bread or a cup of cinnamon hot chocolate.

Recipe FAQs
Technically, they are not. All-purpose flour is not considered keto-friendly, unlike almond flour. I have never made this recipe with another type of flour, so I don't know how it would turn out.
Yes! Use a parchment liner in the air fryer basket and scoop the mixture directly onto it. Cook them at 400°F for about 6-8 minutes.
This happens when you overbake them or use too much flour. Ensure that the flour is properly measured and sifted to remove any clumps. Baking them too long will also make them dry.

Breakfast Egg Bites with Sausage
Equipment
- skillet
- 9x13 baking sheet
Ingredients
- 1 pound ground breakfast sausage
- 6 large eggs
- 2 tablespoons salted butter melted
- 1 ¾ cups all-purpose flour
- 2 teaspoons baking powder
- 1 7 ounce can diced green chilis
- 1 ½ cups sharp cheddar cheese
Instructions
- Preheat your oven to 400°F.
- Heat a nonstick pan over medium heat for a few minutes. Once the pan is hot, add your ground sausage. Had a spatula to break up the sausage as it cooks for about 5 minutes, or until no longer pink in the middle. Remove the pan from the burner and let the sausage cool down for 10 minutes.
- Add the ground sausage to a large mixing bowl along with the eggs and melted butter. Whisk vigorously to beat the eggs.
- Add the flour and baking powder to the bowl. Whisk until no pockets of dry flour remain unincorporated.
- Gently fold in the shredded cheese and diced green chilis until they are evenly distributed throughout your batter.
- Use a cookie scoop or large spoon to drop 12 large balls of biscuit batter onto a baking sheet and bake for 10 minutes.
- Serve and enjoy!
Notes
- Store these egg bites in a plastic bag or airtight container for up to 4 days in the refrigerator. They are easily reheated in the microwave for a quick breakfast!
- Be careful not to overbake them so they don’t become dry, tough, or even burned! Once the middle is set, they are done.
- Feel free to omit the diced green chiles if you prefer. If you are concerned about spice, you can try mild chiles.
