This Tater Tot Breakfast Bake is an easy breakfast, brunch or dinner! Amount of sausage, bacon, ham, onions, mushrooms and peppers can easily be adjusted!
This Tater Tot Breakfast Bake is an easy way to make breakfast, brunch or even dinner, yes dinner, for you and your family! You can use all of your favorite morning foods including bacon, sausage or ham or just your favorite vegetables or a combination of both! All definitely taste delicious!
You can easily adjust the amount of sausage, ham or bacon you use. Some will definitely prefer more than others! For that matter I have just used leftover ham and it tasted great!
For those of you that prefer to only use vegetables you can do that too! Just chop and sauté peppers and mushrooms with your onions or add whichever vegetables you have on hand. I have added chopped up broccoli and spinach as well and never had a single complaint!
This Tater Tot Breakfast Bake even tastes great with a little or a lot of cheese. I leave that up to you. You have to try to make your own version of this delicious breakfast bake!
Ingredients in Tater Tot Breakfast Bake
- tater tots
- eggs
- bacon
- sausage
- onion
- cheese
- milk
- butter
- salt
- pepper
- ground mustard
- green onions
How to make Tater Tot Breakfast Bake
Preheat oven to 350 degrees. Prepare an oven ready DEEP casserole dish (about 9x9 inches) with cooking spray. Set aside.
In a large skillet, melt butter and saute onions. Add sausage and cook until meat is browned and no longer pink and onions are tender. Drain on a paper towel lined plate.
Fry chopped bacon until cooked. Drain on a paper towel lined plate.
Dump sausage and onions on to the bottom onto the bottom of the prepared casserole dish.
Sprinkle ¾ of your bacon over top of the sausage and onions.
Evenly sprinkle approximately 2 cups of the shredded cheese over cooked bacon and sausage.
In a large bowl whisk together the eggs, milk, mustard, pepper and salt.
Pour over the cheese, bacon and sausage.
Top with frozen tater tots in rows.
Bake for 75 minutes.
Add remaining shredded cheese and reserved cooked bacon on top of your tater tots. I usually put the bacon on first so it doesn't burn under the broiler.
Broil for about 5 minutes or until the top is golden brown. Garnish with chopped green onions. Let stand for 10 minutes before serving. Enjoy!

- 1 bag tater tots, frozen

- ½ pkg bacon, chopped, cooked, divided
- ½ pound sausage (ground breakfast, italian or honey garlic) no casings)
- 1 medium onion, diced
- 3 cups cheese, shredded, divided to taste
- 1 ¼ cup milk (2 %)
- 2 tablespoons butter
- ¼ teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon mustard, ground
- 2 - 4 green onions, chopped

Can this be made the nite before?

To be honest I have never tried it but I would do everything except the following. I am concerned about the tater tots becoming soggy so I would add them just before baking. Also I would add the cheese the next morning and press it under the egg mixture. Remove casserole from fridge and leave it on the counter for 30 minutes. Put cheese in and tater tots on top and bake.
