This Easy Lemon Layered Pound Cake is a perfect no bake dessert, especially for summer! Your favorite pudding flavor and you have dessert in no time at all! My favorite is lemon! I just find it so refreshing and I love the way it tastes with the whipped cream!
Easy Lemon Layered Pound Cake is similar to my Peaches and Cream Stuffed Cake. Both are so easy and always a definite crowd pleaser! I love being able to purchase a cake and making it so much better by adding just a few ingredients. Homemade cakes are even better but in the summer months especially I like to turn the oven on as little as possible!
Easy Lemon Layered Pound Cake is just that, easy! Really you can make or purchase any plain cake you want. Slice it into layers and spread the pudding between each layer. I even put extra pudding on top, right under the whipped cream, and every bite is a delight!
This is one of the first cakes that my son help me make. I would make the cuts and I had a blast watching him carefully spread the lemon pudding all over each layer of this Easy Lemon Layered Pound Cake! Great memories! I think his favorite part was making and sprinkling the lemon zest all over it when it was all done! He always felt that he created a work of art!
This Easy Lemon Layered Pound Cake is definitely a keeper! Great to have around in a pinch! I can't remember how many times I have taken a frozen pound cake out of the freezer, grabbed some pudding from the cupboard and whipped up some cream to put on top of this simple and totally delicious dessert!
Sometimes, instead of making our Easy Lemon Layered Pound Cake, I buy mini cakes like the mini angel food cake below, to serve when company is coming over! At times I like to serve the cakes as an individual dessert. Right before serving I add some whipped cream to the top and sprinkle some lemon zest all over it. There you have it a beautiful, simple and tasty dessert!
Ingredients for Easy Lemon Layered Pound Cake
- lemon pudding and pie filling
- eggs
- pound cakes
Topping
- heavy or whipping cream
- sugar
How do you make an Easy Lemon Layered Pound Cake?
Prepare the lemon filling according to package directions, including the 2 egg yolks.
As soon as this mixture starts to boil remove it from heat and set aside to cool.
Egg whites should be at room temperature.
Beat in a small bowl until stiff.
Fold into your lemon filling. Your filling will still be hot.
Cut your cake twice so you end up with three slices from end to end.
Take the bottom piece of cake and place it in a bread pan.
Spread a thick layer of filling on top of it.
Place middle slice of cake gently on top.
Spread more filling on top.
Gently place top layer of cake on top.
Add more filling on top and refrigerate.
Repeat with the other loaf.
Topping
Grab a small bowl and combine cream and sugar.
Beat until stiff peaks form.
You can either serve cake slices with a spoonful of the whipped cream, spread cream all over the cake before serving or spread some whipped cream all over the top. It is up to you!

Easy Lemon Layered Pound Cake
Equipment
- 2 loaf or bread pan (9 x 5)
Ingredients
- 1 Lemon Pudding and Pie Filling
- 2 large eggs separated
- 2 pound cakes
- 1 cup whipping cream
- 2 teaspoons sugar
Instructions
- Prepare the lemon filling according to package directions, including the 2 egg yolks. As soon as this mixture starts to boil remove it from heat and set aside to cool.
- Egg whites should be at room temperature. Beat in a small bowl until stiff. Fold into your lemon filling. Your filling will still be hot.
- Cut your cake twice so you end up with three slices from end to end. I slice the top off too so the cake is flat. My friend uses it. I leave it up to you. The idea is that you have a length of cake, some filling, cake, filling and then cake with some filling on top.
- Prepare two bread pans with tinfoil. Set aside.
- Now you have to build your cakes. I do this one at a time. Take the bottom piece of cake and place it in the bread pan. Next spread a thick layer of filling on top of it. Leave about a half an inch around the edge. Place middle slice of cake gently on top. Spread more filling on top. Gently place top layer of cake on top. Add more filling on top and refrigerate. If you are using the top of the cake just place the small slice on top! Repeat with the other loaf.
- While cakes are cooling in the refrigerator you have to prepare the whipping cream. Grab a small bowl and combine cream and sugar. Beat until stiff peaks form. Now you can either serve cake slices with a spoonful of whipped cream, spread cream all over the cake before serving or spread some whipped cream all over the top. I usually just cover the top. My husband will always cover the entire cake with whipped cream. It is up to you!

Do you use a small box of pudding or a large box?
Also can you use the instant box of pudding (that you don't have to cook) or does it need to be the kind you cook? Your cake looks luscious. I too am a lemon lover. Can't wait to try this quick & easy recipe now that the hot weather is upon us. Thanks for posting it.

As always you are most welcome! I do my best! I use one box of lemon pudding and pie filling and it needs to be made on the stove unfortunately. I use Sherriff brand and I am not being paid to say it! I have tried it with instant pudding and prefer the result with the cooked pudding. This dessert is so easy and I absolutely love it!
