We are the type of people that almost always eat something sweet after dinner. We love all desserts, but cake seems to be our favorite! When we think about which cake we want to make this Fabulous Fruit Cocktail Cake comes up again and again.
This recipe has been in my family for generations. It was passed down to me by my grandmother. Somehow knowing that it was a favorite of hers, makes it a favorite of mine too!
It is a fairly simple cake to make. I usually have all of the ingredients on hand in my pantry. It takes no time to make the batter! The cake does need 1 hour and 20 minutes in the oven.
It is also one of those cakes that tastes just as great the next day. It holds up well if you take it with you to a picnic to a party. It always seems to be a ground favorite!
We typically serve it with fresh whipped cream on the top. If we are feeling the need for a little something extra, a big scoop of vanilla ice cream is also delicious! Sometimes we even do both!

Fabulous Fruit Cocktail Cake
- 1 cup sugar -
- 1 cup all-purpose flour -
- 1 teaspoon baking soda -
- 1/2 teaspoon salt -
- 1 large egg, beaten
- 1 can (14.5 oz) fruit cocktail, drained
- 1/2 cup brown sugar, packed
- 1/2 cup pecans or walnuts, chopped `
Preheat your oven to 325 degrees.
Prepare a 9x9 or 8x8 inch pan with cooking spray and set aside.
In a large bowl combine flour, sugar, baking soda ans salt
Add egg and stir to combine.
Add fruit cocktail and stir some more.
Pour into your prepared pan.
Mix brown sugar and nuts and sprinkle all over the top.
Bake for 1 hour and 20 minutes.
Serve warm with whipped cream. Enjoy!
