- 1 cup almond meal
- ½ cup butter softened
- ½ cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- 6 croissants
- ½ cup sliced almonds
- 1 tablespoon powdered sugar

- Preheat the oven to 350°F/180°c. Line 2 baking sheets with parchment paper and set aside.
- Add the almond meal, softened butter, granulated sugar, egg, vanilla extract and almond extract to the bowl of a stand mixer. Beat on a medium speed for 1-2 minutes, or until smooth and well combined, scraping the sides of the bowl as necessary.
- Slice the croissants in half with a bread knife. Spread 1 tablespoon of the almond filling over the bottom half of each croissant, and cover with the top half.
- Spread another tablespoon of filling over the top of the croissant, then press sliced almonds gently into the almond filing. Place the croissants on the lined baking sheets.
