Easy Almond Croissants

Preheat the oven to 350°F/180°c. Line 2 baking sheets with parchment paper and set aside.
Add the almond meal, softened butter, granulated sugar, egg, vanilla extract and almond extract to the bowl of a stand mixer. Beat on a medium speed for 1-2 minutes, or until smooth and well combined, scraping the sides of the bowl as necessary.
Slice the croissants in half with a bread knife. Spread 1 tablespoon of the almond filling over the bottom half of each croissant, and cover with the top half.
Spread another tablespoon of filling over the top of the croissant, then press sliced almonds gently into the almond filing. Place the croissants on the lined baking sheets.
Bake the croissants for 10-12 minutes, or until the almond mixture is lightly golden. Dust with the powdered sugar and serve while warm.
- If you prefer, you may use your favorite homemade croissant recipe instead of store-bought croissants.
- Tent them with foil if the almonds start to burn or brown too quickly.
- Don’t overbake the almond croissants, or they will become very dry and crumbly.
