    Blueberry Croissant French Toast

    This blueberry croissant French toast is a delicious take on an old favorite. Croissants are soaked with a French toast mix and loaded with blueberries then baked to perfection.

    If you’ve never had croissant French toast, then you’re about to take the fast train to tasty town. This is one of the best French toast recipes you’ll ever eat!

    Blueberry Croissant French Toast

    This was inspired by my other fruity French toast recipe on this site and pairs well with this delicious sausage patty recipe.

    Ingredients

    It only takes a few simple ingredients to make this recipe. You’ll find them all easily at your local grocery store.

    • Bakery croissants sliced in half
    • Large eggs
    • Heavy whipping cream
    • Maple syrup
    • Blueberries
    • Fresh squeezed orange juice
    • Granulated sugar
    • Cornstarch
    • Orange zest

    Instructions

    This recipe is so easy to make that even beginners can do it. It only takes a few simple steps.

    Step 1: Prep

    Preheat the oven to 375 degrees and spray a 9×13 baking dish with nonstick spray.

    Step 2: Make the Egg Mixture

    Whisk the eggs, heavy cream, vanilla, and maple syrup together until smooth in a medium mixing bowl.

    Step 3: Construct the French Toast Casserole

    Dip the bottom slices of your croissants in the egg mixture, covering them completely. Then place them in the baking dish in a layer and top them with about a half cup of blueberries. Repeat with the top pieces of croissants, topping with another layer of blueberries.

    Step 4: Bake

    Bake in the oven for 35 minutes or until the tops of the croissants are golden brown.

    Step 5: Make the Blueberry Orange Sauce

    While your French toast bakes, combine 1 cup of blueberries, orange juice, sugar, cornstarch, and orange zest in a saucepan and cook over medium heat until thickened.

    Continue to cooking, stirring constantly, for about 5 to 7 minutes until your sauce becomes a bit like jelly. Set aside.

    Step 6: Top and Serve

    Remove the croissant French toast from the oven and let it cool for 5 to 10 minutes. Then serve topped with the blueberry orange sauce.

    Hint: When stirring your sauce, make a back and forth nothing along the bottom of the pot from left to right to ensure that nothing sticks to the bottom.

    Substitutions

    Don’t have the correct ingredients on hand or want to change something up? Here are some helpful tips for you to change this blueberry croissant French toast.

    • Milk – If you don’t have heavy whipping cream, milk will work.
    • Storebought orange juice – If you don’t have oranges, just use storebought orange juice.

    Variations

    • Cinnamon – Add a pinch of cinnamon to the egg mixture and the blueberry orange sauce.
    • Extra “Eggy” – Make a bit more egg mixture than called for and really soak the croissants in it until they’re soggy. It makes a very eggy effect.

    Ingredients

    • 6 large croissants already baked and sliced in half (hamburger style)
    • 5 large eggs
    • 1 cup heavy whipping cream
    • 1 teaspoon vanilla extract
    • 1 teaspoon maple syrup
    • 2 cup fresh blueberries
    • ½ cup fresh squeezed orange juice
    • ¼ cup granulated sugar
    • 1 tablespoon cornstarch
    • 1 tablespoon orange zest

    Instructions
     

    • Get out and measure your ingredients.

    • In a medium mixing bowl, whisk together the eggs, heavy cream, vanilla extract and syrup.

    • While the croissants are baking, mix together your blueberry orange sauce.

    Blueberry Orange Sauce

    • Over medium heat combine 1 cup blueberries, orange juice, sugar, cornstarch and orange zest.

    • Stir until sauce thickens.

    • Continue stirring for 5-7 minutes or until sauce has reached a jelly like consistency. Pour in a heat resistant bowl and set aside.

    • When baking time is complete for the croissants, carefully remove from the oven and allow to cool for 5-10 minutes.
