One of my favorite things about homemade banana bread is how it fills the whole house with the warm smell of butter, bananas, and vanilla while it bakes. This version feels extra special because browning the butter adds a deep, nutty richness that makes every slice taste like it came from a bakery.

My grandma never let overripe bananas go to waste. She always said the browner the bananas, the sweeter the bread, and she'd have a fresh loaf cooling on the counter before anyone even realized those bananas were past their prime. I think she would have loved the addition of browned butter and gooey chocolate chunks in this version.

If you enjoy homemade banana bread, you'll also love my peanut butter banana bread and banana bread cake. This is another wonderful way to use up ripe bananas while creating a bakery-quality treat everyone will ask you to make again.

    Variations

    • Chocolate & sweet twists: Use dark, milk, bittersweet, or white chocolate, swap in chocolate chips or mini chips, or replace some of the brown sugar with maple syrup or honey for a different flavor profile.
    • Nuts & spreads: Fold in chopped walnuts, pecans, hazelnuts, almonds, or macadamia nuts, or swirl peanut butter, almond butter, cookie butter, or Biscoff spread into the batter.
    • Fruit & spice additions: Add cinnamon, pumpkin pie spice, nutmeg, cardamom, or espresso powder, then mix in dried cranberries, raisins, shredded coconut, strawberries, or raspberries for extra flavor and texture.
    • Toppings & texture: Finish the loaf with chopped nuts, coarse sugar, streusel, toasted coconut, oats, or extra chocolate chunks before baking for added crunch.
    • Easy adaptations: Bake the batter as 12 muffins (20-24 minutes) or substitute a 1-to-1 gluten-free flour blend for a gluten-free loaf with a slightly denser texture.

How to Make Brown Butter Banana Bread

Don't let the browned butter fool you-this homemade banana bread is surprisingly easy to make. In just 4 simple steps, you'll have a rich, moist loaf filled with gooey chocolate chunks that's perfect for breakfast, snacking, or dessert. Preheat the oven to 350ยฐF. Grease a 9x5-inch loaf pan and line it with parchment paper, leaving an overhang on the two long sides.

Brown butter being browned in a saucepan until nutty.

Step 1: Brown the Butter and Prepare the Wet Ingredients. Mash the bananas in a large mixing bowl and set aside. Melt the butter in a light-colored saucepan over medium heat and continue cooking for 3 to 5 minutes, stirring occasionally, until golden brown with a nutty aroma. Immediately pour the browned butter, including the browned bits, over the mashed bananas and stir to combine. Let cool for 3 to 5 minutes, then stir in the brown sugar, eggs, sour cream, and vanilla until smooth.

Dry ingredients and chopped chocolate folded into banana bread batter.

Step 2: Finish the Batter. In a separate bowl, whisk together the flour, baking soda, baking powder, and sea salt. Add the dry ingredients to the banana mixture and stir just until no dry streaks remain. Fold in the chopped chocolate, reserving about 2 tablespoons for the top of the loaf.

Batter in a parchment-lined loaf pan topped with chocolate chunks.

Step 3: Fill the Pan. Pour the batter into the prepared loaf pan and smooth the top. Sprinkle the reserved chocolate chunks evenly over the batter, then finish with the flaky sea salt.

Step 4: Bake and Cool. Bake for 55 to 65 minutes, or until a toothpick inserted into the center (avoiding melted chocolate) comes out with moist crumbs but no wet batter. If the loaf begins to brown too quickly, loosely tent it with foil during the final baking time. Cool in the pan for 20 minutes, then lift the loaf out using the parchment paper and transfer it to a wire rack to cool for at least 20 minutes more before slicing.

    Expert Tips

    • Use quality ingredients: Choose very ripe bananas, brown the butter until it's golden and nutty, and use a chopped chocolate bar for the richest flavor and gooey chocolate pockets.
    • No chocolate bar? Substitute 1 cup of semi-sweet chocolate chips for the 6-ounce chocolate baking bar. Chocolate chips hold their shape more during baking, while chopped chocolate melts into rich, gooey pockets throughout the loaf.
    • Mix and bake gently: Stir the batter only until the flour disappears, check for doneness away from melted chocolate, and loosely tent the loaf with foil if the top browns too quickly.
    • Prevent sinking: Mix the batter just until combined, use the correct amount of mashed banana, and avoid opening the oven too early to help your loaf bake up tall and evenly.
    • Cool completely: Let the bread cool in the pan for 20 minutes, then on a wire rack for another 20 minutes before slicing so the crumb sets properly.
    • Check for doneness: Start checking the loaf around 55 minutes by inserting a toothpick into the center, avoiding any visible chocolate chunks. It should come out with a few moist crumbs but no wet batter. For the most accurate results, the center should reach 200-205ยฐF on an instant-read thermometer.
    • Frozen banana tip: If using frozen bananas, thaw and drain the excess liquid before measuring 1ยฝ cups of mashed banana to prevent a gummy loaf.
    • Store for later: Keep the loaf tightly wrapped at room temperature for up to 4 days or freeze whole or sliced for up to 3 months for an easy make-ahead treat.

If you love homemade quick breads like this, you may also enjoy my cream cheese chocolate banana bread and pumpkin banana bread.

    Storage Directions

This brown butter banana bread stays wonderfully moist for several days and freezes beautifully, making it perfect for baking ahead.

Room Temperature: Once completely cooled, wrap the loaf tightly in plastic wrap or store it in an airtight container for up to 4 days.

Freezer: Wrap the whole loaf or individual slices tightly in plastic wrap followed by aluminum foil or place in a freezer-safe container. Freeze for up to 3 months. Thaw slices at room temperature for about 1 hour or thaw a whole loaf overnight.

Reheat: Warm individual slices in the microwave for 15-20 seconds, or heat in a 325ยฐF oven for about 8 minutes for a lightly crisp exterior and gooey chocolate.

Make Ahead: Bake the loaf a day in advance and store it tightly wrapped at room temperature. The flavor actually improves by the second day as the ingredients have more time to meld together.

    Serving Suggestions

    • Breakfast or brunch: Serve warm with butter, strawberry butter, cream cheese, peanut butter, or chocolate hazelnut spread, alongside coffee, tea, or a cold glass of milk.
    • Fresh fruit & desserts: Pair with fresh berries, air fryer banana fritters, banana slices, baked strawberries, cheesecake fruit salad, or top a warm slice with vanilla or homemade banana ice cream, whipped cream, caramel, or chocolate sauce.
    • Make it extra special: Turn leftover slices into banana bread French toast, bread pudding, or ice cream sandwiches for a delicious new dessert.
    • Perfect for entertaining: Add it to holiday breakfasts, brunch buffets with our banana bread cookies, bake sales, or wrap a loaf as a thoughtful homemade gift for family and friends.

Brown Butter Banana Bread Recipe FAQs

Why should I brown the butter to make brown butter banana bread?

Browning the butter gives the banana bread a rich, nutty, caramel-like flavor that regular melted butter can't match. Be sure to scrape all the browned bits into the batter since they contain the most flavor.

What are the best bananas for brown butter banana bread?

The best bananas are heavily spotted or mostly black with very soft peels. They provide the sweetest flavor, the most moisture, and the best texture for homemade banana bread.

    Equipment

    • 9 x 5 inch loaf pan

    Ingredients

    • 3 medium very ripe bananas about 1 ยฝ cups mashed; peels should be heavily spotted or mostly brown
    • ยฝ cup salted butter 1 stick / 113g
    • ยพ cup light brown sugar 160g packed
    • 2 large eggs room temperature
    • โ…“ cup full-fat sour cream 80g, room temperature
    • 2 teaspoons vanilla extract
    • 1 ยพ cups all-purpose flour 225g
    • 1 teaspoon baking soda
    • ยผ teaspoon baking powder
    • ยฝ teaspoon fine sea salt or heaping ยผ teaspoon table salt
    • 6 oz semi-sweet chocolate baking bar roughly chopped into irregular chunks or chocolate chips
    • ยฝ teaspoon flaky sea salt for topping (such as Maldon)

    Instructions

    • Preheat your oven to 350ยฐF (177ยฐC). Grease a 9x5 inch metal loaf pan and line it with a strip of parchment paper long enough to hang over the two long sides. This makes it easy to lift the finished loaf straight out of the pan.
    • Peel your bananas, break them into chunks, and place them in a large mixing bowl. Mash them thoroughly with a fork until only small lumps remain and the texture looks like chunky applesauce. Set the bowl aside.
    • Melt the butter in a small light-colored saucepan over medium heat. Once it melts, keep cooking it, stirring occasionally, for about 3-5 minutes. You will hear it crackle and sputter as the water cooks off, then it will go quiet and small golden-brown bits will appear on the bottom of the pan. The butter will smell nutty and toasty. As soon as you see those golden bits, pour the browned butter immediately into the bowl with your mashed bananas and scrape every drop from the pan, since those brown bits carry a lot of the flavor.
    • Stir to combine, then let the mixture sit for 3-5 minutes to cool slightly before adding your eggs. This step is important. Hot butter poured directly onto eggs can start to cook them before they are incorporated into the batter.
    • Add the brown sugar to the cooled banana and butter mixture and stir well until combined. Add both eggs and stir until fully mixed in, about 30 seconds. Add the sour cream and vanilla extract and stir again until smooth.
    • In a separate medium bowl, whisk together the flour, baking soda, baking powder, and fine sea salt. Pour the flour mixture into the banana mixture and stir gently with a spatula or wooden spoon just until no dry streaks remain. Do not overmix. The batter does not need to be perfectly smooth and a few small lumps are fine.
    • Set aside about 2 tablespoons of the chopped chocolate for the top and fold the rest into the batter with just a few gentle strokes.
    • Pour and scrape the batter into your prepared pan and smooth the top. Scatter the reserved chocolate chunks over the surface and sprinkle evenly with the flaky sea salt.
    • Bake on the center rack for 55-65 minutes, until the top is deep golden brown and a toothpick inserted into the center of the loaf in a spot away from any visible chocolate comes out with moist crumbs but no wet batter. If your toothpick hits a melted chocolate pocket, wipe it clean and try a different spot. The very center of the loaf may look barely set, but it will firm up as it cools. Resist checking before the 45-minute mark.
    • If the top is getting too dark before the loaf is done, loosely tent a piece of aluminum foil over the pan and continue baking.
    • Let the bread cool in the pan for at least 20 minutes before lifting it out using the parchment paper handles. Transfer to a wire rack and cool for at least another 20 minutes before slicing. Slicing too early can cause the center to look gummy.

    Notes
