Blueberry Croissant French Toast
This blueberry croissant French toast with blueberry sauce is loaded with the flavors of buttery croissants, Fench toast, and blueberries.

Get out and measure your ingredients.
Preheat the oven to 375 degrees and spray a 9”x13” baking dish with cooking spray.
In a medium mixing bowl, whisk together the eggs, heavy cream, vanilla extract and syrup.
Whisk until smooth.
Dip each bottom croissant piece in the egg mixture and cover entirely with mixture. Place croissant halves on bottom of prepared pan.
Until all 6 are placed to fit.
Sprinkle with ½ cup blueberries.
Dunk and soak top halves of each croissant in egg mixture and place of top of each bottom half.
Top with additional blueberries, about another ½ cup.
Place in the oven and bake for 35 minutes or until the tops of your croissants are golden brown.
While the croissants are baking, mix together your blueberry orange sauce.
Blueberry Orange Sauce
Over medium heat combine 1 cup blueberries, orange juice, sugar, cornstarch and orange zest.
Stir until sauce thickens.
Continue stirring for 5-7 minutes or until sauce has reached a jelly like consistency. Pour in a heat resistant bowl and set aside.
When baking time is complete for the croissants, carefully remove from the oven and allow to cool for 5-10 minutes.
Once cooled, begin serving immediately.
On a small plate.
Top with blueberry orange sauce.
Until covered with sauce.
Add whipped or ice cream if desired.
