Ingredients
You will need a few simple items to make these chocolate-covered Ritz holiday crackers. I use two kinds of chocolate in this recipe to ensure easy dipping!
- Salted circle butter crackers: I like to use original Ritz crackers for this recipe. They have the perfect salty flavor. Feel free to use your favorite store-brand round crackers.
- Dulce de leche: I like to use dulce de leche for these crackers because its rich, thick consistency keeps it from oozing out of the sandwiches. If there’s another thick caramel that you prefer, feel free to use it instead.
- Chocolate: I use a mixture of chocolate chips and melting chocolate for a smooth, easy-to-dip coating on the crackers. This combination also helps prevent the chocolate from seizing too quickly. I like semi-sweet chocolate the best, but you can use milk or dark if you prefer.
- Coarse sea salt: I love a sprinkle of sea salt on top of the chocolate Ritz crackers for a little texture and flavor. It balances the sweetness so well and adds to the adorable presentation.
See the recipe card below for exact ingredient amounts, nutritional information, and detailed instructions.
Variations
- White chocolate Ritz crackers: Swap the chocolate for all white chocolate for an extra rich twist.
- Peanut butter and jam Ritz crackers: For a spicy rendition of peanut butter and jelly, fill the chocolate-covered Ritz crackers with peanut butter and raspberry jalapeno jam.
- Mint chocolate Ritz crackers: Coat the crackers with mint-flavored chips instead of chocolate chips. Fill the middle of the sandwiches with festive peppermint frosting for a seasonal twist.
- No chocolate: Instead of a chocolate coating use 1 cup of peanut butter, caramel or butterscotch chips instead with a teaspoon or two of oil to smooth out coating if necessary.
How to Make Chocolate Covered Ritz Crackers
To get started making these chocolate Ritz sandwiches, I recommend gathering all of your ingredients first. Then, line baking sheets with parchment to prevent sticking. It makes cleanup easy, too!
Step 1: Lay out the crackers and add caramel. Place the crackers salt side down on one of the prepared baking sheets. Add about a teaspoon of dulce de leche to each one.
Step 2: Finish the sandwiches. Place a second cracker on each caramel-topped one, salt side up. Gently press it down. Then, put the pan in the refrigerator for about 30 minutes.
Step 3: Melt the chocolate. Add the chocolate chips and melting wafers to a double boiler. Stir until the chocolate is fully melted and smooth.
Step 4: Dip the Ritz sandwiches. Remove the chocolate from the heat and carefully dip each cracker sandwich into it using a spider or fork. Gently tap it to allow any excess chocolate to drip off.
Step 5: Place on the pan and add salt. Put each Ritz chocolate sandwich onto a separate parchment-lined pan and sprinkle sea salt on top.
Step 6: Decorate and chill. Drizzle extra chocolate on top of the sandwiches to make a cute design. Allow them to be fully set before serving!
⭐ Hint: Sprinkle the coarse sea salt onto the chocolate before it sets. If you wait too long, the salt won’t stick.

Recipe FAQs
Yes. I like to use dulce de leche because it’s thicker than traditional caramel, so it stays in the sandwiches better when dipping them in the chocolate. You can put them in the refrigerator for a few minutes before you dip them to help the caramel cool.
Sure! I recommend the double boiler method to melt the chocolate for even heating. If you need to use the microwave, heat it in 20-second intervals, stirring in between, until fully melted.
It either needs to be warmed longer or it has gotten cold too quickly. Place the bowl of chocolate back over the double broiler and add coconut oil or shortening to thin the chocolate.
