Substitutions and Variations
When making breakfast kabobs, you may not always have all the necessary ingredients on hand. Fear not! Here are some ingredient substitutions for you to consider.
- Pork Sausage (ground breakfast sausage) - Use ground beef, ground pork, ground turkey, ground chicken or a combination instead.
- Thick Cut Bacon - If using a thin or regular slice, cooking times will need to be adjusted. Thick cut when rolled is about 1” high, vs a regular slice of bacon which is only ⅓-½ ” and cooked in much less time.
- Dijon Mustard - Use yellow mustard instead.
- Spicy - Add a bit of chili pepper flakes, diced jalapeno pepper, our jalapeno powder, smoked jalapeno powder, or chipotle powder to the egg mixture for a bit of heat. You can also serve up our homemade hot pepper sauce on the table as well.
- Add Seasoning - To give your meatballs more flavor, consider adding some fennel seeds, Italian seasoning, thyme, or garlic powder.
- Add Vegetables to Eggs - Saute and dice some onions, peppers, mushrooms or your favorites and put into muffin pan first before you add the eggs.

Bacon Rolled Up
Lay bacon strips onto a parchment lined baking sheet and brush each strip with dijon mustard. Combine brown sugar, red pepper flakes, and pepper in a small bowl or ramekin.
Sprinkle ½ of the seasoning over the dijon mustard. Flip bacon over and roll up the bacon.
Breakfast Meatballs
Next, add sausage to a bowl, salt and pepper and form into 1” balls. Use a cookie scoop for uniform sizes.
Add the sausage to the baking sheet with the bacon. Place baking sheet in the oven on the center rack and bake for 10 minutes.
Baked Eggs
Spray a mini- muffin tin with non-stick cooking spray. Combine eggs, milk, and a pinch of salt and pepper in a bowl and whisk well.
Pour eggs into the muffin tin and fill each ½ way. Add to the oven and bake for 15 minutes. if you have an egg bite mold, you can also use this in place of the muffin tin.
Sprinkle the bacon with the remaining seasoning and flip the sausage balls over. Place back into the oven and bake for 10 more minutes. At this point check how close your bacon is to being cooked and keep an eye on it to prevent burning. Some brands of bacon require longer to cook.
Remove from pan and place in bowls.
Prepare skewers by alternating sausage meatballs, bacon rolled up, and eggs. Drizzle with sriracha if desired.
