Toasted Cheesy Bacon Bites
- 6 slices bacon chopped
- 2 tablespoons butter
- 2 tablespoons mayonaise
- 3/4 cup cheese shredded
- 2 tablespoons onion diced
- 8 slices white sandwich bread crusts removed
Preheat your oven to 375 degrees. Prepare a baking sheet with parchment paper and set aside.
In a medium sized skillet cook bacon until crisp and onions until tender. Set aside on a paper towel lined plate.
In a small bowl combine butter, mayonaise , shredded cheese, onion, and bacon. Stir until blended. Set aside.
Remove crusts from bread slices. Using a rolling pin flatten each slice of bread. Using a spoon spread about 1 heaping spoonful of mixture all over each slice of bread. Roll each slice up and use toothpicks to secure the ends. Place on your prepared pan. Bake in oven for between 15 and 20 minutes. Remove from the oven when toasted to your liking. Cut into 3 pieces and serve with toothpicks and a dip of your liking if desired. Enjoy!
