These Toasted Cheesy Bacon Bites are a fast and yummy snack! It is so hard not to eat the entire bowl yourself! Who doesn't love a little bit of cheese, bacon and onions in every crunchy bite? Even if you want to skip the bacon step this snack does not disappoint! I love appetizers like this. So easy to prepare and they disappear as fast as lightening! Well, that's what my husband Ken says anyways!

Truth be told, using sandwich meat means you skip the bacon preparation and just include chopped up ham, salami, turkey or whatever your heart desires in the cheesy mixture! This recipe is even faster to prepare and just as delicious!

Toasted Cheesy Bacon Bites
Ingredients
- 6 slices bacon chopped
- 2 tablespoons butter
- 2 tablespoons mayonaise
- ¾ cup cheese shredded
- 2 tablespoons onion diced
- 8 slices white sandwich bread crusts removed
- toothpicks
Instructions
- Preheat your oven to 375 degrees. Prepare a baking sheet with parchment paper and set aside.
- In a medium sized skillet cook bacon until crisp and onions until tender. Set aside on a paper towel lined plate.
- In a small bowl combine butter, mayo and shredded cheese.
- Add onion and bacon. Stir until blended together.
- This mixture is delicious.
- Remove crusts from bread slices. Using a rolling pin flatten each slice of bread.
- Using a spoon spread about 1 heaping spoonful of mixture all over each slice of bread.
- Press mixture towards one end.
- Roll each slice up and use toothpicks to secure the ends.
- Place on your prepared pan.
- Bake in oven for between 15 and 20 minutes. Remove from the oven when toasted to your liking.
- Cut each into 3 pieces and serve with toothpicks and a dip of your liking if desired.
