Ingredients

The main players are below, but you can find the complete ingredient list along with amounts in the recipe card at the end of the post.

- Beef pot roast: You want to choose a pot roast with plenty of marbling throughout the entire piece of meat. This will slowly cook down over time and make it tender and juicy.
- Whole berry cranberry sauce: Look for this on your canned fruit or vegetable aisle. If you're making this outside the holiday season, it may be on a bottom shelf.
- Ketchup style chili sauce: Heinz is the popular brand that makes this sauce. It's a cross between a hot chili sauce and ketchup, with a bit more zing than ketchup.
- Spices: You will need ground ginger and onion powder to season the sauce.
- Worcestershire sauce: Gives the sweet and sour a bit more depth of flavor.
- Flour: Just a bit at the end to help thicken the sauce. You can use cornstarch instead.
Substitutions
- Beef pot roast: Swap it for steak cubes or stew meat instead of a whole roast.
- No chili sauce? You can use ketchup and add some cayenne to get a similar flavor profile.
- Swap the Worcestershire sauce with red wine vinegar.
Variations
- Like it spicy? This dish is great with a teaspoon or so of chili pepper flakes or jalapeno powder to give it a bit of heat. If you like a smoky, spiciness try this smoked jalapeno powder, or chipotle powder.
- Add more vegetables such as potatoes, bell peppers, carrots, zucchini, and mushrooms. Add them during the last hour of cooking so they cook to tender crisp consistency.
- Add extra spices such as garlic powder or some fresh garlic, cumin, smoked paprika, or dried oregano.

FAQ
For the best results, we recommend using raw boneless chuck roast with its wonderful fat marbling that helps keep it juicy and tender when cooked over low heat for a long period of time.
Yes, you can. Bake it in the oven at 300 degrees for 2 ½ to 3 hours.
The internal temperature of your roast should reach at least 145 degrees in order for it to be cooked through and safe to eat. You can also test for doneness by inserting a fork into the center of the roast and if it easily pierces through the meat then your beef is usually done!
That depends on the size of your roast. In general, it should take between 6 and 8 hours. Begin checking for doneness after about 5 hours. When it easily shreds with a fork, it's done.
