For those of you that prefer minced garlic, you can easily substitute it! I always add a little extra garlic though when I have done it but then I love garlic! For this recipe though I do try and use ginger whenever possible!

Delicious Glazed Carrots
- 4 cups baby carrots or carrots, large, sliced
- 3 tablespoons sugar, divided
- 3 tblsp butter
- 1 cup chicken broth
- 1 heaping tblsp ginger, minced or garlic if preferred
- 1 tblsp lemon juice
- 1/4 teaspoon salt, more or less to taste
- 1/4 teaspoon pepper, more or less to taste
In a skillet with a lid, bring ginger, carrots, salt, 1 tablespoon sugar, and chicken broth to a boil.
Cover and reduce heat to medium and simmer until carrots are starting to become tender, about 5 minutes. Stir occasionally.
Uncover, increase heat to medium high, and boil until liquid is reduced. About 5 minutes.
Add butter and remaining 2 tablespoons sugar to skillet. Stir constantly and make sure carrots are nicely coated, about 3 minutes. Remove from heat, add lemon juice and combine. Season with more salt and pepper if desired. Serve immediately and enjoy!
