Can you believe that Thanksgiving is coming around in a few months? I cannot wait to share my scrumptious pumpkin pie recipe with you! As the saying goes, "no Thanksgiving is complete without pumpkin pie," and I would agree.
But, this year I decided that I wanted to make a twist on my original pumpkin pie recipe. Am I the only one who takes a classic dish and makes it my own? When I made my first pumpkin pie some years ago, I was seriously nervous about making such an important recipe.
But then I realized that it was really just like any other dessert! Or maybe even easier because you don't have to worry about cake layers or making sure the batter is evenly distributed throughout the pan.
So I started experimenting. I started with adding some cinnamon and ginger for added flavor, but that was too much! After a few tries (with my husband trying every version!), I stumbled upon this recipe.

I love these bars because they are easy to take on the go! They won't fall apart like regular pumpkin pie and still taste great! You could even dip them in whipped cream and sprinkle a little cinnamon on them!

As I mentioned before I have made my share of pies in the past. But it seems that making bars is way easier to prepare. All you have to do is mix everything together, press it into the pan , bake and devour! It's much simpler!
My husband and I made these bars on a Sunday night, after we finished our last minute shopping for the upcoming week. We had a few errands to run tomorrow , so we decided to make a dessert that could be easily transported through the car.
This dessert would definitely be perfect for that kind of situation!

Ingredients for Perfect Bar Pumpkin Pie
- (1) 8oz package of Pillsbury Crescent roll dough sheet
- 15oz can of pumpkin puree
- 1 cup half and half
- 2 large eggs
- 1 cup granulated sugar
- ¾ cup packed brown sugar
- 1 tablespoon pumpkin pie spice
- 1 teaspoon vanilla extract
- Whipped topping for garnish (optional)
- Cinnamon for garnishing (optional)
How to make Perfect Bar Pumpkin Pie
Preheat oven to 350 degrees and grease the bottom of a 9”x13” baking dish with non-stick cooking spray.
Gently unwrapped dough sheet and press into the bottom of the baking dish.
In a large mixing bowl, combine pumpkin, half and half, sugars, pumpkin pie spice and vanilla. Mix until thoroughly combined.
Pour pumpkin mixture into a baking dish and spread evenly.
Bake for 45-50 minutes.
When baking time is complete, carefully remove from the oven and allow to cool for 60-90 minutes.
When cooling time is complete, cut the dish into 12 equal parts by making evenly spaced cuts, three horizontally and two vertically.
Top with whipped topping and cinnamon for garnishing and enjoy!
