    Mint Brownie Ice Cream

    This easy no-churn mint brownie ice cream is way better than the grocery store mint chip you can buy! It's made with only five ingredients and mixes up in minutes resulting in a rich, smooth, and creamy ice cream with chunks of chocolate brownie pieces. A tasty frozen treat that's perfect for a hot summer day or any time your ice cream craving strikes!

    Making ice cream in the freezer is so much easier than the old-school way of churning it. Plus, it's a simple solution for homemade ice cream when you don't have an ice cream maker or any interest in making that investment.

    Homemade mint fudge brownie ice cream needs longer in the freezer but that part is completely hands-off, and when the time is up, you will be thrilled by the smiles you see when you serve up it up!

    There is no doubt that this easy no-churn ice cream recipe tastes better than any store-bought mint cookie or mint chocolate chip ice cream.

    Mint Chocolate Brownie Ice Cream

    This homemade ice cream recipe was inspired by my no-churn hot chocolate ice cream recipe on Kitchen Divas, and is the perfect dessert to make using fresh-baked or leftover brownies.

    Ingredients

    All you need are five simple ingredients to make a batch of mint chocolate brownie homemade ice cream.

    • heavy whipping cream
    • sweetened condensed milk
    • peppermint extract
    • green food coloring
    • brownies

    Instructions

    Making mint ice cream with already cooked brownie squares only takes a few steps. Here is a brief overview, you will find the full recipe with photos in the recipe card.

    Step 1: Whip the Heavy Cream

    Place the chilled heavy cream in a large bowl and use a hand mixer to beat until it begins to form soft peaks.

    Step 2: Add in the Flavors

    Add the condensed milk, peppermint extract, and food coloring to the whipped cream mixture. Use a whisk to mix together all the ingredients until it's smooth and the food coloring is fully incorporated into the ice cream base.

    Step 3: Mix in the Brownies

    Add the crumbled brownies to the bowl and stir the brownie pieces into the mixture until they are evenly distributed throughout the mixture.

    Step 4: Freeze It

    When everything is fully mixed, pour the ice cream mixture into a 9x5 inch loaf pan and allow the mixture to set in the freezer for 4-6 hours.

    Step 5: Serve It Up!

    Ice cream may be soft set after four hours in the freezer and you can scoop it up and enjoy it right away! If it sits longer in the freezer it will be quite firm and may need to sit at room temperature for a few minutes before it will scoop.

    Substitutions

    Don't have the correct ingredients on hand? Or want to change something up? Here are some helpful tips for you to change this brownie mint ice cream.

    • Peppermint extract - Use the same quantity of another mint flavored extract such as spearmint. You can also use a heaping tablespoon of fresh mint to add the mint flavor but make sure it is chopped very fine.
    • Brownies - Swap out the brownies with crushed Oreo cookies or chocolate graham crackers.

    Variations

    Try garnishing this ice cream with a few sprigs of fresh mint, a drizzle of chocolate, or a piece of brownie.

    • Extra Chunky - Make it even better with chocolate chips, Andes mints, peppermint Ghiradelli squares. You won't be disappointed!
    • Make it Pretty - If serving in bowl, add a few sprigs of fresh mint and chocolate sauce.
    • Ice Cream Brownie Bottom - Serve it on top of a brownie square with whipped cream and fresh mint.

    After the ice cream mixture is fully set, store it in an airtight container or leave it in the loaf pan and cover it tightly with plastic wrap to ensure it will last for up to two months.

    Here are a few expert tips to make sure your brownie mint ice cream comes out perfectly!

    • The time it takes for the ice cream to set depends on your freezer. Usually after four hours, the ice cream is set and ready to eat and by six hours it's quite hard. If you haven't frozen ice cream before, check it at different intervals to see how quickly it freezes.
    • Don't skip whipping the ice cream. It's what creates the creamy texture and keeps all the brownies from sinking to the bottom of the loaf pan before the mixture freezes.
    • To speed up the time needed to whip the cream, make sure the heavy cream is very cold. Also use a cold metal bowl and electric hand mixer to beat the cream.
    • Use any store bought, already prepared brownies, your favorite brownie mix made in advance or cook up some our Grasshopper Brownies to mix in. Just be sure that if you bake fresh brownies, they are fully cooled before you mix them into the ice cream.

    Do you have questions about brownie mint ice cream? Here are some of the most commonly asked questions about mint fudge brownie ice cream.

    Can I leave out the green food coloring?

    Yes, leaving out the food coloring will not affect the flavor or texture of this homemade mint ice cream. It will simply be a white or off-white colored ice cream with plenty of mint flavor.

    Will mint brownie ice cream taste different if I use spearmint extract instead of peppermint?

    Both of these extracts will give the ice cream a minty flavor and they are similar in many ways. However, peppermint gives a stronger, more intense flavor so you may find you need to add more spearmint extract to get enough minty flavor if using it as a substitute.

    Help! My ice cream is way too hard to scoop, what can I do?

    For best results, allow the ice cream to sit on the counter at room temperature for 5-10 minutes prior to scoop. If it's still too hard to scoop, fill a mug with hot water and dip your ice scoop into it prior to dipping in the ice cream. The heated ice cream scoop will make it easier to scoop up the ice cream.
