Throughout my years, I've eaten a lot of sweets. One thing that I love is that I consider myself a "foodie" which is really just an excuse to give myself the want and need to try everything in sight.

You'll find that a lot of people just buy their ice cream sandwiches from the store, but I prefer to make them this way. When you have two chocolate chip cookies that hold together the ice cream perfectly, why fix something that isn't broken?

History of Ice Cream Sandwiches
Ice cream sandwiches are so good, and they've been around for so long that most of us don't even think twice about them. If we want them, we simply go to the store and buy them, or in this case, we make our own.
However, everything comes from somewhere, right? So let's take a look at where ice cream sandwiches come from.
The earliest mention of ice cream sandwiches in North America is around 1899. Before that time, street vendors sold ice cream slabs between sheets of paper. They called them hokey pokeys.
In 1899, someone had the idea of using cookies instead of sheets of paper. Photos from around 1905 show ice cream sandwiches being sold in the Jersey Shore area.
From those humble beginnings, the commercially available ice cream sandwich as we know it was born. In 1945, Jerry Newberg invented the ice cream sandwich that we're all familiar with today, selling them at Forbes Field in Pittsburgh.
The most recent variation, an ice cream sandwich made from chocolate chip cookies, was invented in the 70s. That's the type of ice cream sandwich we're making today.
Cookie Ice Cream Sandwiches Recipe
I love this recipe because it's all about the 4th of July. Those red white and blue sprinkles are amazing and just add so much festive fun.
But don't worry, if you're not able to make up this ice cream cooking sandwich for July 4th, you can always make it any time of the year. All you need is a bit of motivation and the ability to change out the color of the sprinkles. It's really as simple as that.
Fruity Pebbles Ice Cream Sandwich
For those of you that follow this blog, you are aware of my longtime love of fruity cereal or specifically Fruity Pebbles. I have a few recipes you might even be interested in trying. This Fruity Pebbles French Toast is one of my favorite ways to start the day and I'm obsessed with this Fruity Pebble Cake!
Not only are fruity pebbles ice cream sandwiches pretty, but they are also oh so super tasty too!

Semi-Homemade Ice Cream Sandwiches
I call these puppies homemade but I guess the truth is that you're not actually making the ice cream that is going in the middle. You're more concentrating on the cookies and then adding in the ice cream to compliment the flavor.
But I won't tell if you won't tell. No one will question you if you show up with these treats. And if they do, then just eat their portion and move on!
And if you're really into the whole from-scratch thing, you can bust out your ice cream maker and even make your own ice cream and create a totally from-scratch treat.
Ingredients Needed to Make Chocolate Chip Cookies with Ice Cream
This is an incredibly easy recipe to make. Essentially, all you're doing is making homemade chocolate chip cookies - which is very simple - and sandwiching ice cream between two of those cookies. As you can see, the recipe only takes a few ingredients, and you probably have all of them in your kitchen already. It couldn't be easier!

How To Make Cookie Sandwiches with Ice Cream
Even though the recipe isn't hard, there are a few tips to keep in mind that can make it even easier.
Mix the dough
Since you're making the cookies from scratch, be certain to pay close attention to the measurements. Also, don't forget to line your baking sheet with parchment paper so that the cookies don't stick.
Scoop out the cookie dough
I love to use an ice cream scoop for this recipe because you're going to want to make the cookies as close in size as possible. If you use an ice cream scoop for each and every one, they should be very similar in size.
Put the cookie dough in the freezer
Don't skip this step! Once you make the dough and add the cookies to the baking sheet, you need to be certain to add them to the freezer to chill.
Let the cookies cool completely
One of the most important things to remember is that you need to let the cookies cool down 100% before trying to add in the ice cream.
You're actually (hopefully) going to use a biscuit cutter like this or like this set of biscuit cutters. You can also use a circle cookie cutter but I prefer the handle on the biscuit cutter to cut out the perfect portion of ice cream. (see the full directions below)
Roll on those sprinkles or sparkles
You can never have too many sprinkles or sparkles so roll away!
Tips for Making Ice Cream Cookie Sandwiches with Sprinkles
- Be sure to allow your cookies to cool completely before applying the ice cream. If the cookies are warm, the ice cream will not adhere as well.
- Before cutting the ice cream with the biscuit cutter, be sure that it is fully firm and not too soft.
- After you apply sprinkles if your cookie doesn’t seem firm enough to bite into, place it back into the freezer for 30-45 minutes to firm up.
- Store sandwiches in the freezer when not eating.
Ways to Change up this Fun Ice Cream Sandwich Recipe
Don't forget that this recipe is fun and easy to change up!
One of the biggest ways to change up this recipe is to change up the flavor of the ice cream. I think that Strawberry ice cream sounds super great as does chocolate ice cream as well. There are so many fun flavors to mix and match during this recipe that you seriously can't go wrong.
You can also make up your own cookies and try out different flavors, too. While I LOVE homemade chocolate chip cookies, I also think that these Best Soft Chewy Cream Cheese Sugar Cookies would be super delicious as well!
If you really want to go all out, you can make your own ice cream. All you need is an ice cream machine and a recipe. There are even no-churn ice cream recipes you can try if you don't have an ice cream maker.
Last, but not least, if you don't want to have sprinkles on the outer edge, you can roll them in chopped nuts or even more chocolate chips. (or a combination, too!)

Storing the Ice Cream Cookie Sandwiches
Storing these ice cream cookie sandwiches is as easy as making them. After all, they're ice cream cookies. You simply keep them in the freezer!
Simply store these cookies in an air-tight, freezer-safe container or heavy-duty freezer bags, and they'll keep well for a couple of months.
Be sure to burp your container and squeeze as much air as possible out of your freezer bags to prevent the freezer burning of your cookies.

Cookie Ice Cream Sandwich Recipe
Equipment
- biscuit cutter
Ingredients
- 1 cup butter or 2 sticks
- 1 cup brown sugar packed
- ½ cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 3 cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- ½ cup chocolate chips
- 48 oz vanilla ice cream
- Red, white & blue sprinkles or whatever color you desire or require
Instructions
- Get out and measure your ingredients.
- Preheat the oven to 350 degrees and line a cookie sheet with parchment paper.
- Begin by mixing together the cookie dough. In a large mixing bowl combine the butter, brown sugar and granulated sugar. Mix until softened.
- After mixture is softened, beat in egg and vanilla.
- Until blended.
- Add flour, baking soda and salt.
- Blend.
- Until incorporated.
- Mix in the chocolate chips.
- Combine thoroughly.
- Using an ice cream or cookie scoop, scoop cookie dough onto parchment paper in 2 tablespoon drops. Press firmly down on each cookie drop to gently flatten the cookie into a thick disc with a flat bottom glass.
- When all cookies are panned out, place pans in the freezer for 30-45 minutes.
- After cookie dough has had time in the freezer, remove and place in the oven and cook for 12 minutes.
- While the cookies are cooling in the freezer, place ice cream in the bottom of a 9x13” casserole dish.
- Spread ice cream evenly into the dish and place back in the freezer to allow ice cream to firm up. This will be a part of the way you gather the ice cream for the sandwiches.
- After cooking time, remove from the oven.
- Allow to cool on a cooling rack. Allow for your cookies to completely cool before continuing.
- Try not to eat one!
- After ice cream returns to being firm, take a biscuit cutter (or cookie cutter) and cut circle sections from ice cream.
- Place these ice cream sections into the back of a cookie.
- Place another cookie on the exposed side of the ice cream.
- Take the ice cream sandwich and roll the ice cream edges of the sandwich into sprinkles to allow for the sprinkles to adhere to the ice cream.
- Serve immediately and enjoy!
