    Fruity Pebbles Pancakes

    These Fruity Pebbles pancakes combine light, fluffy pancakes with the fruity, sweet cereal we all remember as a childhood breakfast treat. Yum!

    Their are two things that I consider iconic breakfasts. That's pancakes and Fruity Pebbles. I know, I know, in the annals of food, there are probably dishes out there that many would rank higher.

    The thing is, though... For me, both pancakes and Fruity Pebbles represent a really delicious set of breakfast memories, and I think they do that for a lot of people.

    Why You Will Love this Recipe

    • It only uses a few simple ingredients, most of which are kitchen staples.
    • It's an easy recipe to make that comes together in just a few minutes.
    • Pancakes are a family favorite!

    Top Tip:

    For the fluffiest pancakes, don't overmix your batter. Stop as soon as everything is combined.

    Ingredients

    You won't need much to make this recipe. Most everything you need is in your kitchen already, in fact! See the recipe card at the end of the post for quantities.

    • All-purpose flour
    • Baking powder - make sure it's fresh to ensure pancakes are light and fluffy
    • Sugar
    • Salt
    • Milk
    • Butter
    • Egg
    • Fruity Pebbles cereal

    Substitutions and Variations

    • Cereal - You can use Cocoa Pebbles or other favorite flavored cereals that are slightly crushed up like Froot Loops, Trix, and the like.
    • Cake Flour - Yes, cake flour. It has less protein in it which means less gluten. That leads to even fluffier pancakes!
    • Add Treats - Add banana slices, chocolate chips or anything else you can think of.

    Instructions

    This is a super easy recipe that uses a basic pancake mix blend. The highlights are below, but you'll find the complete ingredient list in the recipe card at the end of the post.

    1: Combine the dry ingredients with a whisk to avoid lumps. Then add the wet ingredients and mix until smooth. Rest batter ideally for 30 minues and give the flour time to absorb liquid resulting in fluffier pancakes.

    2: Add large spoonfuls of batter to a skillet and sprinkle with Fruity Pebbles. Cook until bubbly, then flip and cook until the other side is golden.

    3: Top with whipped cream, more Fruity Pebbles, and syrup. Enjoy!

    Storage

    Refrigerator: Store in an air-tight container for up to 5 days.

    Freezer: Store in an air-tight, freezer-safe container for up to 3 months.

    Reheat: Place pancakes on a baking sheet in a single layer. Cover them with foil, then bake at 350 for 5 to 7 minutes until hot.

    Make Ahead: While these pancakes are good reheated, they're great when fresh from the pan. I don't recommend making them ahead of time. I do recommend making your batter about 30 minutes prior to allow your flour time to absorb liquid resulting in fluffier pancakes.

    Tips

    • For the lightest, fluffiest pancakes, only mix the batter until combined.
    • Rest batter for 30 minutes to allow flour time to aborb liquid giving you fluffier pancakes.
    • You know it's time to flip the pancakes when the edges look dry and the pancakes are bubbly.
    • Be sure you don't set your heat too high. You want the pancakes golden not burned.
    • Wipe pan after every use.
    • Make sure baking powder is fresh to ensure pancakes are fluffy.

    How long are pancakes good?

    Pancakes will keep in the refrigerator for up to 5 days.

    Why did my pancakes burn?

    If you set your heat too high, the pancakes will get too dark or burned by the time they're ready to be flipped.

    Why are my pancakes tough?

    If you mixed them too vigorously, you developed a lot of gluten in the batter. Gluten makes tough pancakes.

    Ingredients
      

    • 1 ½ cups all-purpose flour
    • 3 ½ teaspoon baking powder

    Instructions
     

    • Add flour, baking powder, sugar, and salt to a large mixing bowl. Whisk together.
    • Add milk, melted butter, and egg. Whisk until batter is uniform and smooth.
    • Heat a skillet over medium-high heat.
    • Spray skillet with cooking spray. Add ¼ cup spoonfuls to the skillet.
