This was inspired by my Fruity Pebbles cake recipe. It worked so well, I knew it wouldn't take much to translate it to a simple, no bake cheesecake. I was so right!

Crust:
- Mini marshmallows
- Salted butter
- Fruity Pebbles cereal
Cheesecake:
- Cream cheese
- Heavy whipping cream
- Lemon juice
- Vanilla extract
- Raspberry extract
- Fruity Pebbles cereal
Substitutions and Variations
- Fruity Pebbles - Use Rainbow Rice Krispies, Cocoa Pebbles, Fruit Loops, Fruity Cheerios or your favorite cereal may be used instead.
- Salted butter - Unsalted may be used instead with 1⁄4 teaspoon salt.
- Lemon juice - Lime, pineapple, or orange juice may be used instead.
- Mini Marshmallows - Use multicolored mini marshmallows instead.
- Raspberry Extract - Use cherry, strawberry, orange, banana, or blueberry extract or none instead.
- Heavy Cream - Use evaporated milk instead and consider adding a few drops of vanilla extract to sweeten a little.
- Go Nuts - Add chopped peanuts, pecans, walnuts, almonds, or your favorite nuts to add crunch to the inside of the cake
- More Stuff - Dried fruit, chocolate, butterscotch, caramel, or white chocolate chips are delicious.
- Change the Top - Add fresh fruit, like berries, whipped cream, a drizzle of melted chocolate or chocolate, caramel, butterscotch, or strawberry sauce. Add a layer of chopped cookies, cream cheese, or buttercream frosting
- Another Layer - Try adding a layer of raspberry or strawberry sauce or jam, chocolate sauce, or whatever your heart desires on top of your crust, underneath the filling, for additional flavor.
Instructions
It only takes a few simple steps to make this easy, no bake Fruity Pebbles cheesecake recipe. The highlights are listed here, but you'll find the complete instructions in the recipe card at the end of the post.
1: Melt mini marshmallows and butter. Then, mix in Fruity pebbles.
2: Press evenly into the bottom and up the sides of a 9-inch springform pan lined with parchment paper.
3: Beat softened cream cheese and sugar. Then, add all ingredients except salt, cornstarch, and Fruity Pebbles and mix again. Add salt and cornstarch, mix again, and fold in Fruity Pebbles.
4: Spoon the filling into the pan and smooth. Chill for 8 hours.
Top the cheesecake with additional fruity pebbles before serving if desired.
Storage
Refrigerator: Store for up to 4 days in an air-tight container.
Freezer: Wrap chilled cheesecake tightly in a double layer of plastic wrap followed by foil and store for up to a month. Remove the cheesecake from the freezer the night before serving.
Make Ahead: This cheesecake is better the longer it chills so feel free to make it a day or two in advance.

Fruity Pebbles Cheesecake
Equipment
- Hand mixer or Stand Mixer with paddle attachment
Ingredients
Crust:
- 5 cups mini marshmallows
- ½ cup salted butter
- 5 cups fruity pebbles
Cheesecake:
- 3 bricks (24 oz) cream cheese
- ½ cup sugar
- ¼ cup heavy cream
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 teaspoon raspberry extract
- 1 Tbs cornstarch
- ½ teaspoon salt
- 1 cup fruity pebbles
Instructions
Crust:
- Line the bottom and sides of a 9" springform pan with parchment paper and set aside.
- Place mini marshmallows and butter into a large, microwave safe bowl. Place into the microwave and heat for 1-2 minutes, until melted.
- Once melted, mix until smooth.
- Add in the fruity pebbles and mix until well coated. Press the mixture evenly into the bottom and up the sides of the prepared pan. Set aside.
Cheesecake:
- In the bowl of a stand mixer fitted with a paddle attachment combine cream cheese and sugar. Beat together on medium speed for 2 minutes, until smooth. Stop the mixer and scrape down the sides of the mixing bowl with a rubber spatula.
- Add in heavy cream, lemon juice, vanilla and raspberry extract. Mix until combined.
- Add in cornstarch and salt and mix until incorporated.
- Remove the bowl from the stand mixer and add in fruity pebbles. Fold in using a rubber spatula.
- Spoon the cheesecake filling into the prepared crust and smooth out.
- Cover and place into the fridge to chill for 8 hours before serving.
- Top the cheesecake with additional fruity pebbles before serving if desired.
