    Easy Beans, Bacon and Chicken

    Easy Beans, Bacon and Chicken is made with baked beans in tomato sauce, bacon and chicken. Fast and fabulous recipe is perfect for any day of the week!

    My late first husband absolutely loved this recipe!  He loved everything about baked beans in tomato sauce.  I think he could have eaten them every day! 

    This recipe is fast and fabulous and can be easily cut in half depending on the size of the group you are feeding!  Perfect for any day or night of the week!

    Easy Beans, Bacon and Chicken is made using only 5 main ingredients!  Most of which I usually have around!  I always have seem to have some chicken thighs and bacon in the freezer, an onion in the fridge and a couple of tins of baked beans in the cupboard! 

    This in one of those meals for busy days when you don't feel like doing much in the kitchen and still want something yummy!

    We have used chicken breast in this recipe as well but we believe that this dish is best served with chicken thighs!  The moist and sweet chicken thigh meat seems to work best with the bacon in this easy dinner idea!  But of course you can decide that for yourself!  

    We have used so many different varieties of canned baked beans to make this recipe! Pick your favorite and give it a try!   I am sure you have one!  We all do!  

    I have seen these cans around every house we have lived in since I can remember!  My grandpa, father and late husband LOVED these beans and could not get enough of them so this recipe was easy for them to love!  I can't wait to hear what you think!

    Ingredients in Easy Beans, Bacon and Chicken

    • onion
    • bacon
    • chicken thighs
    • salt
    • pepper
    • baked beans in tomato sauce
    • shredded cheese

    How to make Easy Beans, Bacon and Chicken

    In a large skillet, over medium high heat, cook bacon until crisp and onion until it is tender.

    Remove with a slotted spoon and allow to drain on paper towel. Set aside.

    Add chicken pieces and sprinkle with salt and pepper.

    Cook for between 3 and 5 minutes.

    Chicken should be cooked and browned.

    Remove with a slotted spoon and place on paper towel.

    Wipe out skillet. I usually use paper towel to do this.

    Return chicken to your skillet, bacon and onion mixture, beans and cheese.

    Stir until heated throughout and the cheese is melted.

    Sprinkle some additional cheese and some green onions on top if desired. 

    Serve immediately. Enjoy!

    Equipment

    • large skillet
    • slotted spoon
    • paper towel
    • Stand or handheld mixer (a wooden spoon works great too)

    Ingredients
      

    • 1 cup onion, chopped
    • 8 slices bacon, chopped
    • 12-16 chicken thighs, boneless, skinless, cut into bite sized pieces
    • salt
    • pepper
    • 2 cans (14 oz) baked beans in tomato sauce
    • 1 cup cheese, shredded

    Instructions
     

    • In a large skillet, over medium high heat, cook bacon until crisp and onion until it is tender.
    • Remove with a slotted spoon and allow to drain on paper towel. Set aside.
