This recipe for our Chicken and Stuffing Oven Bake is delicious and so easy. It includes chicken, cranberry sauce and some onions, carrots, celery and most importantly stuffing! This is a perfect weeknight dinner and always a big hit with kids and adults alike!
This Chicken and Stuffing Oven Bake always reminds me of the holidays in a way. I know its not turkey but the chicken, cranberry sauce and stuffing blend wonderfully together and to me, is total holiday inspired comfort food. My husband always says "how can this remind you of the holidays when it is so simple to make?" Some things he will just never understand! I'm sure you do!

Ingredients in Chicken and Stuffing Oven Bake
- chicken breasts
- whole berry cranberry sauce
- chicken or turkey stuffing mix
- chicken broth
- heavy or whipping cream
- egg
- butter
- onion
- carrots
- celery
- garlic
- paprika
- salt
- pepper
- cooking spray
How to make Chicken and Stuffing Oven Bake
Preheat your oven to 350 degrees.
Prepare a 13x9 inch pan with cooking spray and set aside.
In a large sized bowl combine cranberry sauce, broth, cream, egg, paprika, salt, and pepper. Set aside.
In a large skillet, over medium heat, melt 3 tablespoons of butter.
Add onions, carrots and celery and cook until tender, between 4-7 minutes.
Add garlic right before the vegetables are done. You do not want the garlic to burn. The garlic should cook for no more then a minute.
Dump onion mixture into cranberry sauce mixture and stir.
Add stuffing mix stir to combine. Set aside.
Rinse and pat chicken breasts chunks dry with paper towels.
Season with salt and pepper.
Sprinkle chicken all over the bottom of your prepared pan.
Cover chicken completely with stuffing mixture.
Gently press stuffing mixture down so that the top surface is somewhat flat.
Bake for 45 minutes.
Serve immediately and enjoy!

I made the pork chops & IMO liked better than the chicken. But still love this recipe as I’ve made it 5 times since posting. Modified slightly with 4, boneless 1.5” loin chops, increased broth to 1 cup, subbed paprika for cinnamon (personal preference with pork), tossed in 1 tbl. apple sauce, and baked at same temp for 1.5 hours. Delish!! And, yes, I’m enjoying your recipes. Thank you!
