    How to Make a Cajun Chicken Sandwich

    Get started by preheating your oven to 350° F.

    Step 1: Prepare the chicken: Slice each chicken breast in half. Place plastic wrap over the chicken and gently pound with a meat mallet.

    Step 3: Bake. Place the chicken in the oven and bake for 11-13 minutes.

    Step 4: Make the sauce: Add the Greek yogurt and Cajun seasoning to a small bowl and mix well.

    Step 5: Assemble the sandwiches. Place the chicken, cheese, and toppings on hamburger buns and spread on the sauce.

    Storage

    • Refrigerator: Store your chicken and Cajun sauce separately from the buns and toppings. We recommend placing the chicken in an airtight container and storing it in the refrigerator for up to 3-4 days. You can also freeze it for up to three months.
    • Reheat: For refrigerated chicken, reheat in an air fryer at 350°F for 3-4 minutes or in a 350°F oven for 10-12 minutes until heated through. For frozen chicken, thaw overnight in the refrigerator before reheating.
    • Make Ahead: You can season the chicken up to 24 hours in advance and keep it covered in the refrigerator until you're ready to cook it. You can also cook the chicken and prepare the sauce in advance. Then store them separately in the fridge and assemble the sandwiches when you're ready to eat.

    • 4 boneless skinless chicken breast 6-8 ounces
    • 2 tablespoon olive oil
    • 1 tablespoon Cajun seasoning

    • 4 hamburger buns
    • ¼ onion thinly sliced
    • 1 large tomato sliced
    • 2 lettuce leaves
    • 2 slices Monterey Jack cheese

    • Preheat your oven to 350°F (175°C). Slice the chicken breast in half and then place plastic wrap over the chicken breast slices. Gently pound the chicken with a meat mallet or rolling pin to an even thickness of about ½ inch.
    • Brush both sides of each chicken breast slice with olive oil and then sprinkle Cajun seasoning evenly over both sides of each piece, gently patting it into the meat.
    • Place the seasoned chicken breasts in a baking dish. Bake them for 11-13 minutes or until the thickest part reaches an internal temperature of 165°F (74°C). At this point, if you want, you can broil the chicken for 2-3 minutes to brown it.
    • Combine the Greek yogurt and Cajun seasoning in a small bowl. Mix the ingredients well and then set them aside.
    • Once cooked, remove the spicy Cajun chicken from the oven and let them rest for 5 minutes.
    • Assemble your Cajun chicken sandwiches and serve immediately with potato chips, French fries, or onion rings.
