    Ingredients
      

    • 3 cups of complete pancake mix just add water type
    • Water as called for on the package
    • 1 pound cooked bacon
    • Syrup for dipping

    Instructions
     

    • In a large bowl, prepare the pancake mix as called for on the package by whisking the ingredients needed together until smooth.
    • Spray a large heavy-bottom skillet with nonstick cooking spray and heat it over medium heat.
    • Once the skillet is heated, pour your pancake mix in a straight line the length of your bacon slices onto the skillet. Quickly press a strip of cooked bacon into the mix. Work in batches of 3-5 depending on how many your skillet fits.
    • Cook on that side for about 2 minutes or until the edges begin to become solid and batter bubbles. Then flip the bacon pancake onto the bacon side and cook for 1 minute or until cooked golden on each side.
    • Place the bacon pancakes on a serving tray and serve with syrup over them and/or as a dip.

    Notes

    • Cook the bacon fully before adding it to the pancake batter. Raw bacon will not fully cook in the pancake batter.
