- 3 cups of complete pancake mix just add water type
- Water as called for on the package
- 1 pound cooked bacon
- Syrup for dipping
Instructions
- In a large bowl, prepare the pancake mix as called for on the package by whisking the ingredients needed together until smooth.
- Spray a large heavy-bottom skillet with nonstick cooking spray and heat it over medium heat.
- Once the skillet is heated, pour your pancake mix in a straight line the length of your bacon slices onto the skillet. Quickly press a strip of cooked bacon into the mix. Work in batches of 3-5 depending on how many your skillet fits.
- Cook on that side for about 2 minutes or until the edges begin to become solid and batter bubbles. Then flip the bacon pancake onto the bacon side and cook for 1 minute or until cooked golden on each side.
