    What to Serve with Chicken Enchiladas

    What is your favorite dish to eat when you are craving Mexican food? If you answered anything other than "enchiladas," then we have some work to do. Though not everyone can agree on what is the best thing about Mexican food, one of the most popular dishes in Mexico is without a doubt enchiladas. The only question remains, What to serve with chicken enchiladas?

    What exactly are enchiladas, though? Simply put they are corn tortillas that have been filled with meat and cheese, rolled up tightly, and covered in an onion-tomato sauce called salsa Roja or red sauce.

    There are a few ways we love to make enchiladas. Our favorites are sour cream chicken enchiladas, buffalo chicken enchiladas, pollo fundido and slow cooker enchilada chili.

    They all have a few things in common: shredded chicken, cheese, and enchilada sauce. Enchiladas are filling on their own, serving a side with them make it a full rounded meal.

    WHY SHOULD YOU SERVE SIDES WITH THIS DISH?

    Enchiladas are a traditional Mexican dish which makes it hard to narrow down what the best side would be. What is your favorite thing about enchiladas? Is it their cheesy interior, tangy sauce, or crunchy exterior?

    Regardless of why you love them so much, there are some dishes that just go together like peanut butter and jelly, macaroni and cheese, or in this case, enchiladas and sides.
