Strawberry Crisp is fresh strawberries topped with a crispy sweet topped that is anchored by oats. The oats make this Strawberry Crisp recipe the perfect blend of sweet, and crispy.
Strawberry Crisp is simple to make, and is a fresh tasting dessert. This crumble requires only basic ingredients and turns out to be a delicious sweet treat.
Summer is winding down but the last of the berries are still ripe and ready for picking. This recipe is great with any kind of berry or fruit. A nice crisp apple or peach would be great alternatives to the strawberries.
The topping is simple, and quick to mix up. The hint of lemon juice adds a pop of zip that makes it perfect for anytime you are craving something sweet AND delicious!
I use this recipe for a group dessert when I don't have much time for prep work, but still want something delicious. It is always a crowd pleaser!
What is the difference between a crisp and a Strawberry crumble?
The difference between a strawberry crisp and a strawberry crumble is actually very easy but slight. Crisps usually contain oats in the topping. Using oats in the topping of a crisp adds a bit of texture and crunch. A crumble contains no oats, but usually has brown sugar in the topping for added sweetness and crispiness.
How do I pick ripe strawberries at the grocery store
Strawberries are a perishable food, so it is important to check them for freshness before you buy. When choosing strawberries at the grocery store look for brightly colored, even red strawberries that are firm and free of any mold or dirt on the outside.
The tops will be green and moist. If they have white wilting areas or have dull, brownish coloring they are past their prime. Slightly bend the package to check for signs of freshness. If they are firm and give a little when you press them, that is a good sign.
Avoid severely soft berries or strawberries with mold on them.
What can I add to this crisp recipe
There are so many options for adding additional flavors to this recipe. You can add apples, peaches, or apricots and use lemon juice instead of vanilla extract in the topping for a different zing. Here is a list of fruits that I would add to my crisp.
- apples
- blueberries
- blackberries
- raspberries
- rhubarb
- peaches
Should I use old fashioned oats or instant oats
For this recipe you need to use old fashioned oats. Old fashioned oats are also sometimes called rolled oats. Instant or quick cooking oats are too finely cut to hold up and form a nice crunch.
Can I use frozen strawberries
I do not recommend that you use frozen strawberries in this recipe. When using frozen fruit you need to add sugar and cornstarch or tapioca for the fruits to not become watery, but when adding these ingredients they can alter the texture of your crisp.
How long does this Strawberry Crisp keep
You can store your leftover strawberry crisp in the fridge for up to five days. If you do not eat it all within five days you can move your leftover crisp to the freezer for longer storage.
What should I serve with my strawberry crisp
I suggest that you accompany your dessert with a simple scoop of vanilla ice cream. A nice cold glass of milk is also an option.

- 2 quart casserole dish
- rubber spatula or spoon for mixing
Ingredients for Strawberry Crisp
- 24 ounces fresh strawberries, cored and diced into quarters
- 3 Tablespoons cornstarch
- ½ cup cane sugar
- 1 teaspoon lemon zest
- 1 cup flour, all purpose
- 1 cup rolled oats, not quick cooking
- 1 cup brown sugar, packed
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon salt
- 1 cup butter, melted
- 2 teaspoons vanilla extract
- Optional vanilla ice cream for topping
How to Make Strawberry Crisp
Preheat the oven to 350F.
To a large bowl add the cored and quartered strawberries with cornstarch and toss. Add the sugar and lemon zest, toss again. Set aside while building the topping.
In a large bowl combine the flour, oats, brown sugar, cinnamon, nutmeg, and salt. Use fingers to blend together. Pour in melted butter and vanilla extract. Use a spoon to combine, making sure all of the topping mixture is wet.
Pour the strawberry mixture into a 2 quart casserole dish. Cover with topping. Bake for 40 minutes until the top is golden brown and strawberries are bubbling. Remove from the oven and allow to sit for 10 minutes. Serve with vanilla ice cream or whipped cream.
Tips:
Letting the strawberry crisp sit will allow the juices to thicken and firm a bit. However, depending on how juicy the strawberries are you may find yourself with still quite a bit of liquid. Not a big deal. Still tastes fantastic.
Strawberry Crisp is one of my favorite desserts to make because it's easy and always a hit. I like to serve mine with whipped cream or vanilla ice cream, depending on the occasion.
The best part about this recipe? It can be made ahead of time! So if you're hosting friends for dinner but don't want your oven tied up all day in the summer heat, whip up some strawberry crisp and have guests help themselves while they chat by the pool.
This dessert also freezes really well so feel free to double batch when you find yourself craving it again later in life! Why not try freezing individual portions too? That way everyone gets their own personal serving without having to wait around for yours to thaw out before digging in!
Let me know if you try it. I hope you enjoy this strawberry crisp recipe as much as we do! Enjoy!!
