Peeking in the fridge one morning to see what I could have for breakfast, I noticed leftover turkey. What was I going to do with it? I looked over at the slow cooker, and I knew what would be on the dinner menu that night.
My obsession with tacos is what got me thinking about this turkey tortilla soup recipe in the first place. With the exception of the turkey, many of the ingredients are the same. Garlic and onions with a blend of Mexican spices give this soup that taco flavoring many of us love.
Slow Cooker Turkey Tortilla Soup
This was inspired by my other unique turkey sandwich recipe on this site and pairs well with this amazing Mexican corn casserole recipe.
Although my husband is happy when I make tortilla turkey soup, my son gets ecstatic when I do! I make a separate batch for him and load it up with chopped jalapeno peppers. For those that follow my post, know all of Patrick's meals have to be spicy. The spicier, the better. He's been that way since he was a teenager. To each his own. Whatever makes you happy.
Slow Cooker Turkey Soup Recipe
This slow cooker turkey soup recipe lists a medley of spices and ingredients that results in a fantastic-tasting soup.
When I mentioned to my good friend and taste-tester, Renate, that I had a turkey tortilla soup I wanted her to sample, her eyes lit up. Although she's a lifelong lover of soups, she'd never even heard of tortilla turkey soup. So, she was excited to give it a go.
The verdict was a two thumbs up and said it would taste even better with a little more garlic and chili powder. Those that follow my post, know how much I love garlic. It seems Renate is a bigger fan than me!
And she makes a good point. Feel free to adjust these ingredients to your liking. Just be sure you taste as you go. You don't want one flavor overpowering the other.
For the Soup
- Chicken broth
- Canned corn
- Chopped yellow onion
- Minced garlic
- Canned fire-roasted tomatoes
- Cumin
- Chili powder
- Garlic powder
- Cayenne pepper
- Shaved cooked turkey
- Lime juice

- Cilantro
- Tortilla chips
- Avocado slices
- Jalapeno slices
- Sliced lime
- Scallions
- Monterey cheddar cheese blend

Instructions
This is just about the easiest soup you'll ever make. It only takes a few minutes of prep and then a few hours of letting the crock pot do its thing.
Step 1: Combine All Ingredients
Combine all the ingredients in a 6-quart or larger slow cooker and mix thoroughly.
Step 2: Cook
Cook on low for 6 hours or high for 2 to 3 hours.
Step 3: Serve
Spoon the soup into bowls and top with your favorite garnishes. Enjoy!
Hint: Although you can cook this soup faster on the high setting, I prefer cooking it on low whenever possible.

This is an incredibly easy recipe, but I have a couple of tips to ensure it comes out perfectly for you. These are simple tips so be sure to give them a quick once over.
- Use a plastic spoon to mix your ingredients so you don't scratch your slow cooker.
- You can cook this on high for a shorter amount of time, but if you have the time, I recommend using the low setting. I think it lets the flavors meld better.

Soup
- 2 cups chicken broth
- 1 can (15 oz) corn
- ½ cup yellow onion chopped
- 3 cloves garlic minced
- 1 can (15 oz) fire- roasted tomatoes
- 1 teaspoon cumin
- ½ teaspoon chili powder
- 1 teaspoon garlic powder
- ½ teaspoon cayenne pepper
- 1 lb shaved turkey or leftovers
- ¼ cup Lime, fresh squeezed
To Garnish
- Cilantro
- 2 Limes, fresh
- Tortilla chips
- Avocado slices
- Fresh jalapeno slices
- Scallions
- Monterey Cheddar Blend Cheese
Instructions
- Get out and measure your ingredients.
- In a 6-quart or large slow cooker, add chicken broth and corn.
- Next, add garlic and onion.
- Add fire roasted tomatoes.
- Add cumin, chili powder, garlic powder and cayenne powder.
- Stir until blended.
- Add turkey and lime juice, if using.
- Cook on slow for 6 hours or on high for 2-3 hours.
- Using a large spoon or ladle, spoon out soup into serving bowls.
- Top with tortilla chips, avocado slices, jalapeno, cilantro, lime or scllions.
