Instructions
This recipe is simple and straightforward with just a few easy steps. Preheat oven to 350°F. Line a 9×9 baking pan with parchment paper or lightly grease.

Step 1: Make Brownies and Cookie Dough. Prepare the brownie batter according to the package directions. Pour the batter into the prepared pan and spread into an even layer.
Bake the brownie layer for 8 minutes.
While the brownies are par-baking, prepare the cookie dough. In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth and fluffy.
Add the egg and vanilla extract and mix until combined.
Stir in the flour, baking soda, and salt until just combined. Fold in the chocolate chips.

Step 2: Add Oreos. Remove partially baked brownies (parbaked) from the oven and arrange 16 Oreo cookies in an even layer over the brownies.

Step 3: Add Cookie Dough. Drop spoonfuls of cookie dough evenly over the Oreo layer. Gently flatten slightly, but allow some Oreo tops to remain visible.
Sprinkle crushed Oreos evenly over the cookie dough.

Step 4: Finish Baking. Return the pan to the oven and bake for about 25 minutes, or until the cookie layer is lightly golden and the center is set.
Allow the brookies to cool completely before slicing into bars.

Recipe Tips
- Storage: Keep brookies in an airtight container at room temperature for up to 3 days or refrigerate for up to 5 days. Wrap them tightly and freeze for up to 3 months. Thaw at room temperature before serving.
- Par-bake the brownie layer first: Baking the brownie base for 8 minutes helps the Oreo cookies stay in place instead of sinking into the batter.
- Line the pan with parchment paper: This makes it much easier to lift the brookies out of the pan.
- Use a warm, sharp knife and wipe between cuts: Run knife under hot water, dry with paper towel, slice, wipe it clean, repeat. This keeps the layers looking neat and defined.
