This recipe is one of my favorite go-to desserts when I need something guaranteed to impress. The layers bake together beautifully, from fudgy brownie to soft cookie to crunchy Oreo. It's simple enough for a weeknight treat but impressive enough for parties.

This was inspired by my Nutella brookie and Oreo cookie bars recipe on this site, and pairs well with this Oreo brownies.

Why You Will Love This Recipe

    • Great for sharing: These fudgy, soft and slightly crunchy bars are perfect for parties and gatherings.
    • Easy shortcut base: Using boxed brownie mix keeps this recipe quick and simple.
    • Kid approved: Kids absolutely love every exciting bite of the Oreo, brownie and cookie combo.

    Ingredients

This Oreo Brookies recipe uses simple pantry staples plus a few fun extras like Oreos and chocolate chips. It's a quick grocery trip for a seriously indulgent dessert.

Ingredients to make Oreo Brookies in bowls on a table
    • Brownie mix: Creates a rich, fudgy base without extra work.
    • Oreos: Add a cookies-and-cream layer and finishes the top.
    • Cookie Dough : Butter, brown sugar, granulated sugar, eggs, flour, and baking soda gives the cookie dough structure and sweetness.
    • Chocolate chips: Add melty chocolate throughout the cookie layer.

See the recipe card below for the exact quantities of each ingredient.

    Variations

    • Peanut butter brookies: Add peanut butter chips to the brownie base, cookie dough or both.
    • Double chocolate: Add extra chocolate chips to the brownie layer.
    • Nutty version: Add chopped walnuts or pecans.

    Instructions

This recipe is simple and straightforward with just a few easy steps. Preheat oven to 350ยฐF. Line a 9ร—9 baking pan with parchment paper or lightly grease.

Step 1: Make Brownies and Cookie Dough. Prepare the brownie batter according to the package directions. Pour the batter into the prepared pan and spread into an even layer.

Bake the brownie layer for 8 minutes.

While the brownies are par-baking, prepare the cookie dough. In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth and fluffy.

Add the egg and vanilla extract and mix until combined.

Stir in the flour, baking soda, and salt until just combined. Fold in the chocolate chips.

Step 2: Add Oreos. Remove partially baked brownies (parbaked) from the oven and arrange 16 Oreo cookies in an even layer over the brownies.

Step 3: Add Cookie Dough. Drop spoonfuls of cookie dough evenly over the Oreo layer. Gently flatten slightly, but allow some Oreo tops to remain visible.

Sprinkle crushed Oreos evenly over the cookie dough.

Step 4: Finish Baking. Return the pan to the oven and bake for about 25 minutes, or until the cookie layer is lightly golden and the center is set.

Allow the brookies to cool completely before slicing into bars.

    Recipe Tips

    • Storage: Keep brookies in an airtight container at room temperature for up to 3 days or refrigerate for up to 5 days. Wrap them tightly and freeze for up to 3 months. Thaw at room temperature before serving.
    • Par-bake the brownie layer first: Baking the brownie base for 8 minutes helps the Oreo cookies stay in place instead of sinking into the batter.
    • Line the pan with parchment paper: This makes it much easier to lift the brookies out of the pan.
    • Use a warm, sharp knife and wipe between cuts: Run knife under hot water, dry with paper towel, slice, wipe it clean, repeat. This keeps the layers looking neat and defined.

    • Serve warm and gooey with M&M ice cream, Almond Joy Ice Cream or whipped cream and chocolate or caramel drizzle
    • Serve at parties on dessert trays with banana cream cheese muffins, Oreo bark, and dulce de leche.

    Recipe FAQs

Can I use different types of Oreos in this recipe?

Absolutely! You can use double stuffed, golden Oreos, mint Oreos, or any flavored variety for a fun twist.

How do I know when Oreo Brookies are done baking?

The cookie layer should be lightly golden and the center should look set but still slightly soft for that perfect gooey texture.

Why do you par-bake the brownie layer first?

Par-baking the brownie layer helps prevent the Oreos from sinking and keeps the layers evenly defined.

Can you use store-bought cookie dough instead of homemade?

Yes just keep an eye on your dessert because cooking times will vary.
