Ingredients
This recipe uses just a few simple ingredients that are easily found at your local grocery store. The main players are listed here, but you'll find the complete ingredient list along with amounts in the recipe card at the end of the post.
- Fire roasted tomatoes
- Roasted red peppers
- green chilis
- Garlic
- Tilapia filets
- Italian seasoning
- Red pepper flakes
- Lemon, sliced
Substitutions and Variations
- Fire Roasted Tomatoes - Use regular diced tomatoes, crushed tomatoes, or fresh chopped tomatoes
- Roasted Red Peppers - Diced bell peppers
- Green Chilis - Use ⅛ - ¼ teaspoon cayenne pepper or diced jalapeno peppers instead.
- Garlic - Garlic powder, garlic flakes, dehydrated garlic, shallots, chives or green onions instead.
- Olive Oil - Use avocado oil, vegetable oil, corn oil, melted butter or cooking spray instead.
- Tilapia Filets - Use salmon or a thicker fish filet or flaky, white fish such as cod, haddock, trout, snapper, flounder, catfish, sole, halibut or grouper.
- Italian Seasoning - Use basil, oregano or thyme individually or in combination instead.
- Lemon - Use orange juice or lime juice instead.
- Add Flavor - Use paprika or chili powder, a tablespoon of capers,
- Parsley for Garnish - Use chives, oregano, basil, arugula, cilantro, or more diced green chilis, roasted red peppers, and/or fire roasted tomatoes on top as garnish instead.
- Add Onion - Use some onion powder, onion flakes, dehydrated onion, green onions, leeks, scallions, diced sweet red or purple onions, or yellow or white onion to taste, if desired
- Add a Topping - Add a sprinkling of freshly grated parmesan cheese by itself, feta or goat cheese or with panko or regular breadcrumbs on top, and some fresh basil, thyme or oregano,
- Spicy - Add a teaspoon of chili pepper flakes, jalapeno powder, smoked jalapeno powder, or chipotle powder to the mixture to imbue heat into the dish. I will also occasionally add a teaspoon of our homemade hot pepper sauce, or use your favorite hot sauce, to the mixture.
- Add Vegetables - Throw in some sauteed mushrooms, or mushrooms and onions before baking or some baby spinach or baby kale before serving,
- Add More Lemon - To add extra flavor and moisture to your dish, top with some fresh squeezed lemon juice before baking, some lemon zest or serve wedges of lemon on top when serving.
Instructions

1: Add fire roasted tomatoes, roasted peppers, diced green chilis, and minced garlic to a greased baking dish.
2: Coat the fish in olive oil, Italian seasoning, salt, black pepper, and pepper flakes. Bake until the fish flakes easily with a fork.
Storage
Refrigerator: Store in an air-tight container for up to 3 days.
Freezer: Store in an air-tight, freezer-safe container for up to 2 months.
Reheat: Place the fish and tomato mixture in a greased baking dish and bake covered at 325 for 15 minutes until heated through.
Make Ahead: You can make this tilapia and then freeze it for future dinners.

FAQ
Yes, you can use frozen tilapia for this recipe if needed however you should be sure to thaw out the fish completely in your fridge before cooking otherwise it may take longer than expected to reach the desired internal temperature of 145°F (63°C).
Bake tilapia for about 25 minutes at 375.
When the tilapia flakes easily with a fork and is no longer tanslucent, it's perfectly baked.
If you don't want to bake tilapia, heat a couple tablespoons of oil in a large skillet over medium heat and cook your Tilapia for 3-4 minutes per side or until cooked through.
No flipping is necessary when baking fish.

How Long to Bake Tilapia at 375
Ingredients
- 2 cans (14.5 oz) fire roasted tomatoes, diced
- ½ cup roasted red peppers sliced
- 1 can (4 oz) diced green chilis
- 1 tablespoon garlic minced
- 1 tablespoon olive oil
- 4 tilapia filets
- 2 tablespoons Italian seasoning
- 1 teaspoons salt
- 2 teaspoons ground black pepper
- 1 tablespoon red pepper flakes
- 1 large lemon sliced
- parsley for garnish
Instructions
- Preheat your oven to 375 degrees and grease a 9x13 baking dish with non-stick cooking spray.
- Add fire roasted tomatoes and roasted red peppers. Diced green chilis, and minced garlic to your baking dish and give it a quick mix to combine the ingredients lightly.
- Spread the mixture out in an even layer in your baking dish.
- Using a mixing bowl, coat your fish front and back, in olive oil and season it with Italian seasoning, salt, black pepper, and red pepper flakes.
- Place your seasoned fish filets into your baking dish and press them down into the fire roasted tomato mixture but do not cover them. Top them with sliced lemon.
- Bake your fish in your preheated oven uncovered for 25 minutes, or until each filet is easily flaked with a fork and no longer translucent.
- Garnish your fish with parsley and serve warm.
