I am lucky to live in an area where super fresh walleye is readily available in season, so I cook with it a lot and have several walleye recipes in our regular rotation. This baked walleye recipe is one of my favorites because the flavors and textures meld so well together.
Almond Crusted Walleye Recipe
This was walleye recipe inspired by my almond crusted salmon recipe on this site and pairs well with this amazing crispy little potatoes recipe.

Instructions
This is an extremely easy recipe to make. It only takes a few minutes of prep and about half an hour in the oven!
Step 1: Make the Dredge Station
Combine flour, garlic powder, salt, and pepper in a shallow bowl. In another shallow bowl, whisk or beat egg and milk together.
Finally, add almonds and breadcrumbs to a third shallow bowl.
Step 2: Bread the Walleye
Coat each walleye filet in the flour, then dredge it in the egg mixture.
Step 3: Bake
Finally cover it in the almond and breadcrumb mixture. Place the breaded filets in a greased baking dish or baking sheet and bake at 350 for 30 minutes or until the internal temperature of the fish reaches 140 degrees and fish flakes easily. Serve with lemon wedges, if desired.
Hint: Gently shake the fish between dredging bowls to remove any excess flour and egg mixture. You only need enough to keep the almond mixture in place.

- Fish - Use another white fish like trout, sole, tilapia, bass, halibut, grouper, haddock, cod flounder, catfish, or pike
- Garlic Powder - Use onion powder, mustard powder or another seasoning blend instead
- Bread Crumbs - Use panko crumbs instead
- Almonds - Use almond meal or coarsely chopped or crushed pistachios, macadamia nuts, pecans, peanuts, walnuts, hazelnuts or your favorite nut or combination instead.
- Eggs and Milk - Use heavy whipping cream instead

- Pan Fry - Cook pan fried walleye over medium heat, with ¼ cup of olive oil or melt ¼ cup butter. Add fillets to hot butter and fry for 2 to 3 minutes per side, depending on the thickness of your fillets. Use a spatula to carefully flip so coating remains in tact.

- 4 4 oz walleye filets
- ¼ cup flour
- 1 teaspoon garlic powder
- 1 teaspoon salt

- 1 large egg
- ¼ cup milk
- ½ cup sliced almonds roughly chopped

- Get out and measure your ingredients.
