    This almond crusted walleye recipe is one of the easiest and flavorful fish recipes you’ll encounter. Tender, flaky walleye is coated in a crunchy almond crust that will have you hooked!

    My husband loves to fish and has done it all his life. I’m lucky because I have access to all of the different kinds of fish he catches. Even in winter.

    There is something about really fresh fish that I just love.

    I m lucky to live in an area where super fresh walleye is readily available in season, so I cook with it a lot. This recipe is one of my favorites because the flavors and textures meld so well.

    Almond Crusted Walleye Recipe

    This was inspired by my almond crusted salmon recipe on this site and pairs well with this amazing crispy little potatoes recipe.

    Ingredients

    You only need a few simple ingredients to make this recipe.

    • walleye filets
    • flour
    • garlic powder
    • salt
    • pepper
    • egg
    • milk
    • almonds
    • breadcrumbs

    Instructions

    This is an extremely easy recipe to make. It only takes a few minutes of prep and about half an hour in the oven!

    Step 1: Make the Dredge Station

    Combine flour, garlic powder, salt, and pepper in a shallow bowl. In another shallow bowl, whisk the egg and milk together. Finally, add almonds and breadcrumbs to a third shallow bowl.

    Step 2: Bread the Walleye

    Coat each walleye filet in the flour, then dredge it in the egg mixture. Finally cover it in the almond and breadcrumb mixture.

    Step 3: Bake

    Place the breaded filets in a greased baking dish and bake at 350 for 30 minutes or until the internal temperature of the fish reaches 140 degrees.

    Hint: Gently shake the fish between dredging bowls to remove any excess flour and egg mixture. You only need enough to keep the almond mixture in place.

    Substitutions

    Don’t have the correct ingredients on hand or want to change something up? Here are some helpful tips for you to change this almond crusted salmon filet.

    • Flour – Use rice flour, almond flour, whole wheat flour
    • Fish – Use another white fish like trout, sole, tilapia, bass, halibut, grouper, haddock, cod flounder, catfish, or pike
    • Garlic Powder – Use onion powder, mustard powder or another seasoning blend instead
    • Bread Crumbs – Use panko crumbs instead
    • Almonds – Use coarsely chopped or crushed pistachios, macadamia nuts, pecans, peanuts, walnuts, hazelnuts or your favorite
    • Eggs and Milk – Use heavy whipping cream instead

    Variations

    Want to personalize this almond crusted walleye recipe? Here are some of my tried and true tips for changing up this recipe.

    • Flour – Instead of flour use corn starch or potato starch
    • Spicy – Add chili pepper flakes or use cayenne pepper to add some heat
    • More Spice – Add dashes of hot sauce or sriracha to egg mixture to add some heat
    • Bread Crumbs – Use your favorite crushed potato chips, corn flakes, corn or rice chex cereal, dried stuffing mix, croutons, nuts or crackers instead
    • Pan Fry – Over medium heat, melt ¼ cup butter. Add fillets to hot butter and fry for 2 to 3 minutes per side, depending on the thickness of your fillets. Use a spatula to carefully flip so coating remains in tact.

    Pierce the fish with a fork at the thickest part of the filet. The filet should flake and be white all the way through. If any part is opaque (grayish), it’s not done.

    Yes, you can by simply placing a frying pan, over medium heat. Melt ¼ cup butter. Add fillets to hot butter and fry for 2 to 3 minutes per side, depending on the thickness of your fillets.

    • 4 4 oz walleye filets
    • ¼ cup flour
    • 1 teaspoon garlic powder
    • 1 teaspoon salt

    • ¼ cup milk
    • ½ cup sliced almonds roughly chopped
    • ½ cup breadcrumbs
    • cooking spray

    Instructions
     

    • Get out and measure your ingredients.
