    Potatoes and cheese are one of my favorite combinations, but there's something about this crockpot potato soup with hash browns that keeps me coming back to it. It's probably one of the slow cooker soups I prepare the most because it's just so easy, but it tastes so scrumptious every time.

    If you like easy potato soup recipes, you will love this cream of potato and leek soup. You may also want to try this sausage kale potato soup. It's Ken's favorite. This savory sweet corn and potato chowder is always a hit with potato lovers.

    • It's quick to get ready: I love how fast it is to prep this soup. The only real work is mixing, measuring, and chopping onions and garlic. It's easy peasy!
    • It's made in one pot: There's no cooking, sauteing, or any other step involved in this recipe. Everything goes into the slow cooker, and then you simply wait for it to be ready to eat.
    • It's budget-friendly: The ingredients I use are very cheap. I have many of them on hand for other dishes that I like to make, so it makes this hash brown soup incredibly convenient.

    Ingredients

    These are the main ingredients I use to make this shortcut crockpot potato soup with frozen hash browns. All you need is the potatoes, some aromatics and spices, both, and of course, cheese!

    • Frozen hash browns: I use the frozen diced hash browns for this soup recipe because I enjoy the texture. You may use the shredded variety if you prefer; it doesn't really change the cooking time.
    • Onions and garlic: These are important as they add depth of flavor to the soup. Potatoes need a lot of care and seasoning to taste good, so freshly chopped onions and garlic are perfect additions.
    • Chicken broth: This works as part of the base for the broth of the soup. It's flavorful, so it works better than water. 
    • Cream of Chicken Soup: I love using canned cream soups in recipes, especially crock pot ones! They are a terrific shortcut because they add flavor and creamy texture with minimal effort.
    • Cream cheese and cheddar cheese: I like the richness and creaminess of cream cheese. It adds a great cheesy flavor and helps to thicken the soup. Also, you can't have a good cheesy potato soup without shredded cheddar!

    Variations

    • Add broccoli. Stir in some freshly chopped broccoli into the soup to give it a broccoli cheddar soup feeling.
    • Add ham. Try adding a protein like diced ham to make it a perfectly filling meal.
    • Use parmesan and roasted garlic. Try roasted garlic instead of minced and finish the soup with grated Parmesan for a robust version.

    How to Make Crockpot Potato Soup Using Hash Browns

    Here are the instructions on how to make frozen potato soup in the crockpot. It's really as easy as measuring and adding ingredients and then letting the crockpot do the work.

    Step 1: Load up the slow cooker. Add all of the ingredients except the cheese to the slow cooker and give it all a good stir.

    Step 2: Cook. Cover and cook it for 6-7 hours on low or 3-4 hours on high.

    Step 3: Add the cheese. During the last 30 minutes, add the cream cheese. Then, add the shredded cheddar after about 20 minutes.

    Step 4: Cook until smooth and serve. Allow the soup to cook for a couple of minutes to ensure all the cheese is melted. Then it's ready to enjoy! Pair with this chicken club sandwich for the classic soup and a sandwich combination.

    Recipe Tips

    • Don't add dairy too early: The cream cheese and cheddar are added toward the end of cooking time. They don't need a lot of time to melt in the soup, and if they cook too long, they can curdle and become lumpy.
    • Make a slurry if needed: If your soup is thinner than you like, make a slurry of equal parts cornstarch and water to thicken it. This would be good to do before you add the cheeses.
    • Use good-quality broth: Ensure that the chicken broth you use is of good quality so you can achieve the best result possible.

    Storage Directions 

    • Storing: Store leftovers in an airtight container in the refrigerator for up to 3 days. Freeze the soup in an airtight container for up to 2 months.
    • Reheating: I recommend skipping the microwave and only reheating this soup in a saucepan on the stove. You need to have control over the heat to keep it from separating or curdling.

    • Enjoy a fresh garden salad as a side dish. This broccoli salad and strawberry spinach salad are both great, as they are refreshing and have a subtle sweetness to complement the savory potato soup.
    • Dinner rolls in the air fryer are great to serve with this crock pot hash brown soup. I love dipping bread in the broth!
    • There's nothing better than a simple dessert like chocolate pudding cake to devour after this simple soup recipe.

    Recipe FAQs

    Do I need to thaw the hash browns first?

    No! They cook just fine from frozen. There's no need to thaw them before you make this potato soup.

    Can I make potato soup with hash browns in a stock pot on the stove?

    Yes, of course. I like to sauté the onions and garlic before adding the broth, soup, potatoes, and seasoning. Allow it to come to a boil and then simmer for about 30 minutes. Stir in the cream cheese and shredded cheddar, and it's ready to serve once they're melted.

    Can I use my Instant Pot?

    Sure! Follow the same steps as the stock pot and saute the onions and garlic until soft. Add all ingredients except cheese and cook on high pressure for 7-9 minutes. After the pressure is released, add both cheeses and switch to the keep warm setting.

    • 1 bag (32 oz) frozen diced hash browns
    • 1 small yellow onion chopped
    • 3 garlic cloves minced
    • 4 cups chicken broth
    • 1 can (10.5 oz) condensed cream of chicken soup
    • 1 brick (8 oz) cream cheese, cut into cubes
    • 1 ½ cups shredded cheddar cheese
    • 1 teaspoon salt

    • Prepare the slow cooker by coating with a light coating of cooking spray.
    • Add frozen hash browns, chopped onion, and minced garlic to the slow cooker.
    • Pour in chicken broth and stir in the condensed cream of chicken soup.
    • Sprinkle in salt, pepper, and Italian seasoning, then stir everything to combine.
    • Cover and cook on Low for 6-7 hours or on High for 3-4 hours, until potatoes are tender.
    • About 30 minutes before serving, add cubed cream cheese to the soup and stir well.
    • Cover and let cook for 20 minutes, then whisk until the cream cheese is fully incorporated and smooth.

      This is the best soup. The fact the crock pot does all the work and makes it perfect for those busy days. I live a dollop of sour cream, chives, and your scotch bonnet hot sauce drizzled on top when i want to get spicy. You guys rock!

      Wow this is the most amazing soup ever. I love how easy you guys have made this recipe. It’s creamy and rich but too rich. It tastes like heaven in your mouth with bacon and scallion topper. A little dollop of sour cream. This is great and i love that the slow cooker does all the work. So delicious! Thank you for this Karin. We can always count on KD in the kitchen!
