- 4 boneless skinless chicken breasts
- 1 can crushed tomatoes
- one cup cherry tomatoes, halved
- 1 ½ tablespoon tomato paste
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- one shallot, minced
- 1 teaspoon red pepper flakes
- ½ cup heavy whipping cream
- half cup fresh basil
- ½ cup Parmesan shavings

How to Make Tomato Basil Chicken
- Season the chicken: Season both sides with garlic powder, pepper, and onion powder over a plate. Rub the seasoning into the chicken.
- Sear the chicken: Add olive oil to a skillet over medium high heat. Sear the chicken 4 minutes per side. Remove from heat and set aside.
- Cook the tomato sauce: Add tomato paste, minced garlic, and minced shallot to the skillet. Saute for 1 minute. Add crushed tomatoes, cherry tomatoes, and red pepper flakes. Cook for 5 minutes. Use a potato masher to crush cherry tomatoes. Stir in the heavy whipping cream.
- Add the chicken back to the skillet and reduce heat to medium. Cook for 10 minutes. Check to be sure chicken reaches an internal temp of 165*
