    Air Fryer Hasselback Zucchini is soft air fried zucchini that is stuffed with garlic flavor and covered in melted cheese.

    Dinner-time conversations are about to get a lot more interesting. I don’t know about you but I’m always looking for something new and exciting to cook. The other day, my sister and I were talking about how we both wanted zucchini for dinner. She mentioned that she had been cooking hasselback zucchini in her air fryer and they’ve turned out amazing, so we’re sharing the recipe with you!

    So what is it? Air fryer hasselback zucchini is a dish that involves baking zucchini that has been sliced, placing them in an air fryer basket, drizzling olive oil over the top of the zucchini, then seasoning with garlic and topping with cheese. This makes for a delicious and healthy side dish.

    Air Fryer Hasselback Zucchini will be perfect with any dinner dish; they are tasty, delicious and are also very healthy for you. Since it’s summer time here in Toronto, we have been craving fresh vegetables. We’ve been eating a lot of broccoli, cauliflower and zucchini. I’m not sure about you but I’m always looking for something new and exciting to cook.

    Not only is this air fryer recipe delicious but it’s also keto and low carb friendly. There’s no need to break your diet with this tasty recipe.

    What kind of air fryer do I need

    You can use any type of air fryer that you have in your kitchen. There are a few important things that you need to make sure you have before you start making your hasselback zucchini.

    1. You need an air fryer with temperature control.
    2. You need to have enough space inside the basket for the item you’re going to cook.

    Can I freeze Air Fryer Hasselback Zucchini

    Yes, you can definitely freeze Hasselback Zucchini. Just make sure to wrap it in cling film or put it in an airtight container before freezing. Once frozen you can just store in a freezer bag until use. This zucchini can last in the freezer for about three months.

    How do I reheat Air Fryer Hasselback Zucchini

    To reheat your Air Fryer Hasselback Zucchini just place it in a 350F oven for about 10-15 minutes or until heated through.

    If you want to reheat in your air fryer, don’t worry, it’s simple to do. Preheat your air fryer to 350 degrees and then heat your zucchini for 5 to 8 minutes, or until warm all the way through.

    How do I store leftover hasselback zucchini

    If you have leftovers from your hasselback zucchini don’t worry you can store it in the fridge for up to three days. To store in your fridge, place your leftover zucchini in an airtight container and keep cold for up to three days.

    Can I use a different type of cheese to make these

    Yes, you can use any type of cheese that you have in your refrigerator to make this recipe with. If you only have mozzarella laying around then I recommend using that.

    You can also get a little wild and mix two different types of cheeses together for an interesting dish.

    More ways to top this zucchini

    If you want to make this zucchini even better you can top it with some sauce for a more flavorful dinner. I’ve used ranch, or even garlic butter to top my zucchini. The options are endless. Here are a few different toppings that I like to use.

    • bacon
    • green onions
    • ranch
    • salsa
    • sour cream

    Ingredients for Air Fryer Hasselback Zucchini

    • 6 medium zucchini squash (about 1.5 pounds)
    • ½ + ½ cup fresh parmesan cheese, shredded and divided
    • 3 tablespoons olive oil
    • 1 teaspoon Italian seasoning
    • ½ teaspoon garlic powder
    • ½ teaspoon sea salt
    • ½ teaspoon black pepper
    • Optional – Fresh Italian parsley

    How to make Air Fryer Hasselback Zucchini

    1. Preheat the air fryer to 400 degrees F.
    2. Add the oil and seasonings to a small mixing bowl and mix well.
    3. Wash the zucchini, then add to a cutting board.
    4. Slice the zucchini most of the way through, crosswise, every ½ inch or so. Gently fan the slices apart and using a basting brush, brush the oil mixture into and onto the zucchini.
    5. Add shredded parmesan pieces between the slices of the zucchini.
    6. Place gently in the air fryer basket (you may need to lay them sideways until they soften up and can lay flat) Bake for 5 minutes, flip upright, then bake for an additional 8-10 minutes.
    7. Remove from the air fryer and top with remaining parmesan and optional fresh parsley.

    I love making these air fryer hasselback zucchini. They have so much flavor because they are coated in olive oil, garlic, salt and pepper before going into the air fryer to cook them through.

    It’s important not to overfill your basket with too many vegetables or else you won’t be able to flip them all over without removing some of the filling from each slice.

    You can also make a nice dip for these by mixing together sour cream, mayonnaise, sugar and onion powder – it tastes like ranch dressing! Let me know in the comments below if this is something that you would try out at home.

    Ingredients
