I don't recommend it. It will melt and separate in the refrigerator. This recipe is best made no more than a couple of hours before serving; then, discard any leftovers.
If you use coconut milk instead of cream of coconut, this can cause the beverage to separate. Check the label!
Coconut cream is thick and unsweetened, while cream of coconut is syrupy and sweet. You may use coconut cream if you want a less-sweet version.

Jack Frost Cocktail
Ingredients
- 3 cups ice
- ½ cup pineapple juice
- ⅓ cup blue curacao
- ⅓ cup coconut rum
- ⅓ cup cream of coconut
- honey if rimming
- shredded coconut if rimming
Instructions
- If rimming your glasses, dip the rim in honey and then shredded coconut.
- To a blender add ice, pineapple juice, coconut rum, and cream of coconut. Blend for about 1 minute or until smooth.
- Pour in prepared glasses with or without additional ice.
Notes
- Ensure that you use cream of coconut or coconut cream and not coconut milk to prevent separation.
- Place your cocktail glasses in the refrigerator to keep your cocktail chilled longer.
