Jack Frost Cocktail
This Jack Frost Cocktail is a frozen beverage that perfectly suits the winter theme. All the ingredients are blended and served with a “snowy” coconut rim.

- 3 cups ice
- ½ cup pineapple juice
- ⅓ cup blue curacao
- ⅓ cup coconut rum
- ⅓ cup cream of coconut
- honey if rimming
- shredded coconut if rimming
If rimming your glasses, dip the rim in honey and then shredded coconut.
To a blender add ice, pineapple juice, coconut rum, and cream of coconut. Blend for about 1 minute or until smooth.
Pour in prepared glasses with or without additional ice.
- Ensure that you use cream of coconut or coconut cream and not coconut milk to prevent separation.
- Place your cocktail glasses in the refrigerator to keep your cocktail chilled longer.
- You may prepare your drink a few hours in advance, but I don’t recommend saving any leftovers.
