- 1 cup mayonnaise
- 1 cup Mexican crema
- 1 teaspoon salt
- ½ teaspoon pepper
- 1 tablespoon minced garlic
- 1 teaspoon cayenne pepper
- 2 limes juiced, about 2 tbsp
- 2 limes zested, about 1 tbs
- 2 cans (15 oz) sweet corn drained
- ½ large red onion diced
- ½ cup cotija cheese crumbled
- ¼ cup cilantro chopped
- 2 tablespoons Tajin seasoning
Instructions
- Prepare the pasta. In a large non-stick pot, cook the pasta according to package instructions. Drain and set aside.
- Make the dressing. In a medium bowl, combine the Mayo, crema, salt, pepper, garlic, cayenne, lime juice, and lime zest. Set aside.
