Cupcakes are a personal favorite of mine and I just can't get enough of them, especially over the holidays! I love how pretty they look and more importantly how amazing they taste!

I can't be the only one who makes desserts depending on who is visiting and I have to admit that over the years I have developed some habits!
Usually, I prepare specific desserts as a result of requests for certain desserts when people visit. For years now, whenever certain cousins come over, I always make The Easiest Caramel Infused Chocolate Cupcakes.
They disappear lightening fast and even though they are adults (practically) now they still look forward to those cupcakes.
My son even looks for them once he knows they are coming because he knows I always make them for them. He is just lucky to live here and always eats one or two before they arrive!
I also do the same thing with my Easy Gingerbread Cupcakes. I always make them for a couple special people in my life, every year over the holidays, and they know who they are!
Sometimes I even stuff them with cream cheese, just like in my Easy Cream Cheese Stuffed Cupcakes which is such a nice change but a little more effort.
My Caramel Apple Cupcakes, I have to admit, I make all year round. They are super easy and so tasty, perfect for any and every occasion. Frankly, any excuse will do!
After Eight Cupcakes
Growing up, I used to love these chocolate covered soft mint candies called a York Peppermint Pattie. Anyone else remember them? They were created in 1940 and are still sold to this day, even though the packaging has definitely changed!
They are very similar to a big After Eight Mint Chocolate Thins or an After Eight, created in the United Kingdom in 1960, which are also just as tasty!
I think what I am trying to say is I have loved the combination of chocolate and mint since I can remember. To me the combination is just as natural as chocolate and peanut butter, caramel and apple or strawberry and banana. I could go on and on, there are just too many to list.

Sometimes I still have mint chocolate chip ice cream but most often I rotate the above desserts!

I have to stress that you must find peppermint extract in order to find the perfect blend of mint and chocolate, in my opinion. I have tried spearmint and found the flavor reminded me of a strange sort of toothpaste so I highly recommend avoiding that extract.
Ingredients in Chocolate Mint Cupcakes
- flour
- sugar
- baking powder
- baking soda
- cocoa powder
- vegetable oil
- eggs
- peppermint extract
- sour cream
- milk
- crushed candy canes or peppermints
White Frosting
- butter
- powdered sugar
- peppermint extract
Chocolate Frosting
- chocolate chips
- heavy cream
- powdered sugar
How to make Chocolate Mint Cupcakes
Mix flour, sugar, baking powder, baking soda, and cocoa powder.
Beat in oil and eggs, then mint extract, sour cream, and milk. If mixture is too dry, add ¼ cup more water.
Pour into a lined cupcake pan, up to a little over half full. Bake at 350 for 15-20 minutes or until cooked through. When cooked, fully cool.
To make white frosting: Beat together all ingredients. If it isn’t smooth enough, add 2 tablespoon milk. Set aside.
To make chocolate frosting: Heat heavy cream on medium on the stove top for 10 minutes. Pour in a bowl of chocolate chips, let sit, and then whisk together until smooth.
Beat in sifted powdered sugar.
Combine white and chocolate frosting in a piping bag, and swirl onto cupcakes.
Sprinkle with crushed mints.
