I’m a big fan of dessert recipes that need little effort, but still turn out delicious and are big enough for potlucks and parties. I’ve always loved my M&M Rice Krispie treats and my air fryer cookie cake when it comes to cooking for get-togethers, but this recent experiment with making a skillet cookie pizza has to be on the top of my list of all-time favorites.

How to Make Chocolate Chip Pizza Cookie
Start by getting all the ingredients ready and preheating your oven to 375 degrees.
Step 1: Prepare brown butter. Brown a part of the butter in a skillet over medium heat and set aside. Add in the remaining butter.
Step 2: Prepare the wet mixture. Combine brown sugar, white sugar, vanilla, and salt in a bowl. Add in the egg yolk and egg. Whisk until thick and smooth. Add in the butter mixture.
Step 3: Make the cookie dough. Combine flour and baking soda and add to the wet mixture.
Step 4: Add the mix-ins. Add chocolate chips and mix.
Step 5: Spread cookie dough. Clean the skillet and transfer the cookie dough into it. Press down and flatten the dough using a spatula.
Step 6: Bake and serve. Bake for around 20 minutes or until light golden brown. Cool down before you cut and serve.

Chocolate Chip Pizza Cookie

- ¾ cup butter
- ¾ cup brown sugar, packed
- ½ cup sugar
- 1 tablespoon vanilla
- 1 teaspoon salt
- 1 large egg
- 1 large egg yolk
- 1 ¾ cups flour
- ¾ teaspoon baking soda
- 1 cup chocolate chips, semi-sweet, Smarties, M&M's, peanut butter chips or whatever your heart desires
Instructions
- Preheat your oven to 375 degrees. Place your cast-iron skillet, over medium heat, and melt 9 tablespoons butter. Cook, stirring constantly, until butter is dark golden brown, has nutty aroma, and bubbling subsides, about 5 minutes. Transfer to la mixing bowl. Stir remaining 3 tablespoons butter into hot butter until completely melted. Set aside.
- Using a whisk, combine brown sugar, granulated sugar, vanilla, and salt with melted butter until smooth. Whisk in egg and yolk until smooth, about 30 seconds. Let mixture sit for 3 minutes, then whisk for 30 seconds. Repeat process of resting and whisking 2 more times until mixture is thick, smooth, and shiny.
- In a small bowl combine flour and baking soda. Then add into butter mixture. Stir until blended, about 1 minute. Add in chocolate chips and stir until no flour pockets remain.
- Wipe your skillet clean with paper towels. Transfer dough to your empty skillet and press into a flat, even layer with a spatula. Transfer your skillet to oven and bake until cookie is golden brown and edges are set, about 20 minutes. Rotate skillet halfway through baking. Using potholders, transfer skillet to wire rack and allow cookie cool for 30 minutes. Slice cookie into wedges and serve with ice cream if desired. Enjoy!.
