    Everything you’ll need to make the best crockpot pot roast recipe is listed below. It’s very simple, with easy-to-find ingredients like carrots, celery, and, of course, a beef roast.

    • Pot roast: I typically grab a 3-4 lb boneless pot roast and there’s enough for 6 servings. It makes great leftovers! It has a recent amount of fat that melts as it cooks and adds flavor to the meat and vegetables.
    • Onion soup mix: This recipe is a Lipton onion soup pot roast because the only seasoning you need is a packet of soup mix. It adds a savory onion flavor that mixes with the broth to create a tasty sauce that coats the other ingredients.
    • Veggies: I use baby yellow potatoes, carrots, celery, and onions. They cook in the crockpot with the pot roast, absorbing tons of flavor from the soup mix and the beef.
    • Beef broth: This provides moisture for the meat and veggies, so they stay moist and tender in the slow cooker.
    • Parsley: This is optional but I like to add it as a fresh garnish. It gives the finished meal a pop of green color that amps up the presentation.

    Step 1: Sear the roast. Grab a large skillet and heat it over medium-high heat. Add a drizzle of olive oil and sear the pot roast for 2-3 minutes per side just to achieve a brown crust.

    • Keep it low and slow if possible: You can cook this crockpot pot roast with onion soup mix on high, but it cooks better on low heat as it becomes more tender and evenly cooked.

    Recipe FAQs

    Can I make this in the oven?

    Of course. Add all of the ingredients to a large Dutch oven and cook it covered in a 325-degree F oven for 4-6 hours or until the beef shreds easily and the veggies are soft.

    Can I make this in the Instant Pot?

    Yes, set it saute to sear the roast. Then, cook all of the ingredients on high pressure for about an hour. Let it naturally release for 15 minutes and then quickly release. Serve and enjoy!

    Do I have to sear the beef first?

    I recommend it for deeper flavor and texture, and to lock in the juices,  but it’s not necessary. You will still end up with a delicious onion soup mix pot roast.
