This is a simple, classic chicken salad recipe. In this version I add mayonnaise, seasonings, celery (or water chestnuts), peppers, onions, carrots, corn, pickles and peas! In our updated version, Easy Chicken Salad Snack Wraps, we add a little sour cream or greek yogurt to the mayo as it just adds such a delicious, tangy flavor!

The great thing about chicken salad is that it can be changed up based on what’s in your fridge or pantry!
- Sliced Grapes, raisins and curry powder to taste
- Chopped dill pickles with shredded cheddar cheese
- Dry mustard powder, diced ham and shredded swiss cheese
- Cranberries, diced celery and shredded apple
- Walnuts or pecans, especially toasted to bring out their nutty flavor
How to Cook Chicken for Chicken Salad
This easy chicken salad can use any kind of cooked chicken! While I often use a store-bought rotisserie chicken, this recipe will show you how to simply cook your chicken breasts in your slow cooker or on your stove top! Both are wonderful options too!
Don’t forget leftover chicken. Especially if it is seasoned, the chicken will add even more flavor to your chicken salad when it is all shredded up! Also, if you think about it, shred your leftover chicken, while it is warm, as it is so much easier to shred! That being said, you could easily dice your chicken breasts if you prefer it!
How Long Does Chicken Salad Last?
We keep our chicken salad in the refrigerator for up to 3 days, as long as the chicken is fresh the day you make it. Remember to refrigerate any unused portions quickly.
Can you Freeze Chicken Salad?
Unfortunately, mayonnaise doesn’t freeze well and that’s the base for the dressing in this recipe. If you’d like ready to go chicken salad, I’d suggest finely chopping the chicken and seasonings.
Freeze the diced chicken in single serving portions. When you’d like a salad, just combine the chicken and seasonings with mayonnaise and any extras you want to include.

Chicken Salad On Anything
- 4 chicken breast, boneless, skinless
- 1 1/2 cups chicken broth -
- 1 cup mayonaise - or more to taste
- 1/2 cup celery ribs, chopped
- 3/4 cup peppers, green, yellow, orange or red, chopped
- 1/2 cup red onion, diced
- 1 tsp pepper -
- 1/2 tsp salt -
- 1/2 cup carrots, shredded
- 1/2 cup corn, canned
- 1/2 cup peas, frozen
- cucumber on side
- tomatoes on side

Spray your slow cooker with cooking spray. Turn your slow cooker up to high. Pour in chicken broth. Place chicken breasts across the bottom of the slow cooker. Cook covered for 1 1/2 - 2 hours, or until chicken is done. Remove chicken from slow cooker into a medium sized bowl and shred with two forks. Allow chicken to cool, usually about 15 minutes. Combine shredded chicken, celery, onions, peppers, salt, pepper, mayonnaise and anything else in a large bowl. Stir until well blended. Cover and chill at least 4 hours before serving.
We choose to use the slow cooker because for us it is easier. No one has to watch the slow cooker! You can place chicken in a large skillet and add chicken broth. Cover and bring to a boil over medium-high heat. Reduce heat to medium low and simmer, covered for 30 minutes or until chicken is done. Remove chicken from skillet, shred in a medium bowl, and allow to cool. Add mayonnaise, desired options and refrigerate for 4 hours or until ready to serve
