Ingredients
Everything you need for this queso recipe with sausage is listed below. There is no extra seasoning required!

- Spicy sausage: I use spicy breakfast sausage for this queso, but regular or spicy Italian sausage is also great. I usually go for Jimmy Dean or Johnsonville.
- Velveeta: You'll need two blocks for this recipe. I like to cut it into cubes so it melts faster and more evenly.
- Canned tomatoes: You'll need Rotel tomatoes with green chiles and a can of fire-roasted tomatoes. Using both adds depth of flavor and subtle heat, balancing the richness of the Velveeta. Rotel tomatoes are amazing in this salsa con queso, too.
See the recipe card below for exact ingredient amounts, nutritional information, and detailed instructions.
Variations
- Swap the meat: Try this recipe with lean ground beef or shredded chicken instead of sausage for a different flavor profile.
- Make it milder: Choose a mild ground sausage and mild Rotel to keep the spice level low.
- Make it spicier: Turn up the heat by adding diced jalapenos to this queso or using hot Rotel tomatoes.
- Lighter version: Make your queso dip with turkey sausage and reduced-fat Velveeta for a less rich result.
How to Make Sausage Queso
Here are the instructions needed to make this queso sausage dip. It only takes a few quick and easy steps!

Step 1: Brown the sausage. Start by browning the ground sausage in a skillet over medium-high heat until it's no longer pink.

Step 2: Add ingredients. Add the Velveeta and both cans of tomatoes to the cooked sausage.

Step 3: Melt the cheese. Lower the heat slightly and let the Velveeta melt until smooth.

Step 4: Transfer and serve. Pour the sausage queso into a serving dish and enjoy warm with air fryer pita chips.
Expert Tips
- Drain sausage thoroughly: After you brown the sausage, drain any excess fat. This prevents your queso dip from becoming greasy.
- Thin with milk if needed: If the consistency is too thick, add a splash of milk to thin it out. Start with just a little and add more as needed.
- Top with cheese and broil it: Get fancy and top your sausage queso with shredded cheddar or pepper jack cheese. Use an oven-safe skillet or transfer it to a casserole dish.
- Storage directions: Put any leftover queso into an airtight container and keep it in the refrigerator for up to 4 days.
- Reheating the queso dip: You may reheat it in 30-second bursts in the microwave or in a saucepan over low heat.

Sausage Queso Recipe FAQs
I don't recommend it. Velveeta delivers the smoothest, creamiest results with the least effort. Any other cheese will need more work and ingredients to turn it into queso.
Yes! Scoop it into an airtight container after it cools and freeze it for up to 2 months. When you're ready to use it, thaw it overnight in the refrigerator and reheat it gently in a saucepan over low heat. The texture may be a little different, but still tasty!
You can cook the ground sausage up to 2 days ahead of time and keep it in an airtight container in the fridge. When you're ready to make the Rotel sausage cheese dip, combine all of the ingredients in a skillet and heat until smooth and creamy.
Sure! After browning the sausage, place all of the ingredients into your slow cooker. Cook on low for 1-2 hours. High heat is too intense for the Velveeta and risks burning the dip.

- Add remaining ingredients to the pan, lower the heat slightly and allow the Velveeta to melt fully.
