Sauasge Queso is a quick 4-ingredient dip recipe that makes the perfect appetizer for potlucks and gatherings. It’s spicy, creamy, and full of robust flavors.

Ingredients

  • 2 pounds spicy pork sausage
  • 32 ounce block Velveeta 2 blocks, cut into cubes
  • 10 ounce Rotel Original can, tomatoes & chiles, undrained
  • 12 ounce fire roasted tomatoes can, undrained

Instructions

  • In a large skillet cook sausage until cooked through on medium high heat. If desired, strain fat.
  • Add remaining ingredients to the pan, lower the heat slightly and allow the Velveeta to melt fully.
  • Transfer to serving dish (11x7?) and serve warm.

Notes

  • If the sausage queso is too thick, stir in a splash of milk to loosen it. Start small and add more as needed until you reach your desired consistency.
  • After browning the sausage, add all the ingredients to your slow cooker instead and cook on low for 1–2 hours. Avoid using high heat, as it can scorch the Velveeta and affect the texture of the dip.
  • Drain off any excess fat after browning the sausage to keep the queso from turning greasy.
