    Chipotle Mayonnaise

    Chipotle mayonnaise combines the cool creaminess of mayo with the heat of chipotle peppers. This chipotle mayo sauce is the perfect spicy dip or sandwich topping.

    I've always loved foods that combine cool creaminess with a kick of heat. That's what this dip delivers. It's a flavor sensation, and it's so good with almost anything.

    Chipotle Mayo Sauce

    This was inspired by my other chipotle based recipe on this site and pairs well with these amazing sweet potato fries.

    Ingredients

    You don't need much in the way of ingredients to make this delicious dip, and everything can be easily found at your local grocery store.

    • Mayonnaise
    • Sour cream
    • Minced chipotle chiles in adobo - more or less to taste
    • Adobo sauce
    • Freshly squeezed lime juice
    • Salt
    • Pepper

    Instructions

    Making this mayonnaise couldn't be easier. It takes two steps, and one of them is just chilling it.

    Step 1: Combine All Ingredients

    Combine all ingredients in a food processor or blender and blend until smooth and creamy.

    Step 2: Chill

    Transfer the mayo to an airtight container or jar with a lid and chill for about an hour before serving.

    Hint: Be sure to let this chill for an hour at the least. The chilling process allows the flavors to blend and meld.

    Substitutions

    Don't have the correct ingredients on hand or want to change something up? Here are some helpful tips for you to change this chipotle mayo sauce.

    • Low Fat - You can make a low fat version by useing low fat mayonnaise.
    • Bottled Lime Juice - Bottled lime juice will work in place of fresh squeezed.

    Variations

    Want to personalize this chipotle mayo sauce? Here are some of my tried and true tips for changing up this recipe.

    • Minced Garlic - Add 1 to 2 teaspoons of minced garlic for even more flavor.
    • Green Onions - Try adding 1 to 2 thinly sliced green onions or scallions.
    • Sour Cream - Try reducing the mayonnaise by ¼ cup and adding ¼ cup sour cream for an extra creamy dip.

    • ¾ cup mayo
    • ¼ cup sour cream or another ¼ cup mayo if desired
    • 2 chipotle chiles in adobo diced, more or less to taste
    • 1 tablespoon adobo sauce
    • 2 tablespoons freshly squeezed lime juice
    • salt

    • Get out and measure your ingredients.

    • This mayo can include sour cream too. For years we just used a cup of mayo and now we use ¼ cup of sour cream sometimes instead of just mayo. Both are wonderful in my opinion and I’d love to hear which version you prefer.
    • Using a blender or food processor, combine mayo, sour cream (if using), adobo sauce, lime juice, and chipotles.

    • Blend until smooth and creamy.

    • Store covered inside your refrigerator for a couple of hours for the flavors to blend together. Then you can properly assess if you need to add more diced chipotle chiles, adobo sauce or salt and pepper if desired.
