    • 1 teaspoon minced garlic

    • Season the chicken breast with salt and pepper.

    • Serve immediately over rice or with a side salad, sprinkle the cilantro over the chicken when serving, if desired.

      There is a nearby Mexican restaurant the my wife and I love to go to. My favorite dish is their chicken chipotle bowl. I just made this recipe this evening. I actually doubled it! Added some diced up bell pepper and mushrooms. Along with some home made Mexican rice. Since that is what is in the dish we get from the restaurant. I have to say that it was extremely delicious! This will be a staple dish probably every month or so.
