Chipotle Mayonnaise
Chipotle mayonnaise is smooth and creamy with a kick of heat. This chipotle mayo sauce is perfect for dipping or topping sandwiches.

- ¾ cup mayo
- ¼ cup sour cream or another ¼ cup mayo if desired
- 2 chipotle chiles in adobo diced, more or less to taste
- 1 tablespoon adobo sauce
- 2 tablespoons freshly squeezed lime juice
- salt
- pepper
Get out and measure your ingredients.
This mayo can include sour cream too. For years we just used a cup of mayo and now we use ¼ cup of sour cream sometimes instead of just mayo. Both are wonderful in my opinion and I’d love to hear which version you prefer.
Using a blender or food processor, combine mayo, sour cream (if using), adobo sauce, lime juice, and chipotles.
Blend until smooth and creamy.
Store covered inside your refrigerator for a couple of hours for the flavors to blend together. Then you can properly assess if you need to add more diced chipotle chiles, adobo sauce or salt and pepper if desired.

- Store refrigerated in an airtight container until needed in an airtight container in your fridge for up to one week.
- Make sure you blend this dip thoroughly to ensure the flavors are combined well. You can't overblend it.
- Let this chill for at least an hour before serving. The longer you chill, the more time the flavors have to meld.
