These Cheesy Bacon Bites are so addictive! That is the only thing that is wrong with them! I can never seem to make enough! They always disappear so fast! I think everyone sees the bacon and knows it will taste delicious instantly! Doesn't everyone love bacon? Yes. The answer is yes. All kidding aside these Cheesy Bacon Bites are full of cheesy goodness and definitely worth a try.
We make these Cheesy Bacon Bites as a snack for our movie nights, when we are watching a sporting event or when company comes over! You can make them spicy or not. That is totally up to you. I even buy flavored cream cheese just to mix it up a little! You really can adjust this recipe easily to suit your personal tastes! The main thing here is that you will enjoy it. After all, with cream cheese and bacon, what's not to love?

To be honest, I can't handle heat or hot foods like I used to but that doesn't mean you can't! Add some hot sauce, sriracha, or diced jalapenos! I highly recommend tasting your cream cheese mixture before spreading it on the bread!
What I love about these little bites is how well they go with any sort of event or with no event at all! As I said, we love to eat these for family nights or while watching the game, but they're also an amazing appetizer for the holidays or potluck addition. I even like to add some scrambled eggs to make them a breakfast treat that no one sees coming!
Ingredients in Cheesy Bacon Bites
Although these delicious bites of cream cheese and bacon look and taste like they're labor-intensive, this is actually a very easy recipe. If you've read any of my other recipe posts, you know I'm all about easy recipes that are absolutely delicious, and these little bites follow that formula.
You only need a handful of ingredients to make these, and they are absolutely worth the minimal amount of effort it takes to create them. In fact, you probably have most, if not all, of the ingredients you need in your pantry and fridge right now. Here's what you need.
- cream cheese
- shredded cheese
- bacon
- green onions
- garlic
- sandwich bread
- cooking spray
- toothpicks

How to make Cheesy Bacon Bites
Making these mouth-watering cream cheese bacon bites is super easy to do. It's mainly a matter of mixing and rolling and then baking. That's it. There are no special tools, ingredients, or methods required. This recipe is absolutely one of the easiest you'll ever make. Here's how you do it.
- Preheat your oven to 375 degrees.
- Prepare a rimmed baking sheet with tinfoil and a wire rack. Coat your wire rack lightly with cooking spray and set it aside.
- Using your handheld or stand mixer, blend cream cheese and cheddar cheese together until smooth.
- Add crisp bacon, green onions, garlic, and jalapenos or hot sauce if using. Continue to whip until incorporated. Taste mixture just to make sure you don't want to add more of anything else, like hot sauce for example.
- Grab a rolling pin or a large round jar and place it at your workstation.
- First, you must cut all of the crusts off of your bread slices. I usually give the crusts to our birds. Regardless of what you do with them, we will not need the crusts for this recipe!
- Using one slice of bread at a time roll out the slice as thin as you can get it. I usually end up with each slice being about ⅛ of an inch thick.
- Next, spread two or three spoonfuls of the cream cheese mixture on top of each slice. Choose an edge and roll the slice up, jellyroll style, as tightly as possible. Repeat this process with all of your slices.
- Now you have to take each rolled-up slice of bread and wrap it tightly with one slice of bacon. The goal is to try to cover the bread completely. Using a toothpick secure the bacon in place. Wrap each rolled bread slice up with bacon and secure with a toothpick.
- Now you have to place all of your Cheesy Bacon Bites on your prepared rack and pan, as evenly spaced as possible. Bake for 45 minutes, flipping over and adjusting at least once halfway through baking. Bacon must be cooked. Allow Bites to cool for at least 5 minutes before serving. The cheese inside will be very hot. Serve with ranch dip or whatever your heart desires! We usually enjoy these just as they are! Enjoy!
Variations
These bacon bites are as versatile as they are delicious. I mentioned earlier that you could add jalapenos or hot sauce to these, but you can do so much more. If you're serving these up as a game day treat, I highly recommend finely diced jalapenos for an extra kick of heat. You can turn these appetizers into a delicious breakFEAST by scrambling up some eggs and adding a bit to the rolled-up interior of the recipe, as well.

You can store these delicious rolls of cheesy, bacony goodness in the fridge for up to five days in an air-tight container. For longer storage, you can freeze them in an air-tight, freezer-safe container or heavy-duty freezer bag for about a month.
Remember, you must enjoy these bites within five days if you don't plan on freezing them. They're made with cream cheese, bread, and bacon, all of which can go bad. Yes, bacon can go bad, no matter how well it's cured. However, I've found that these bites are so good, you rarely have to worry about what to do with leftovers.
